To make this Delicious Baked Shrimp Scampi, You’ll need the following Ingredients:

Ingredients:

1 cup butter

2 tablespoons prepared Dijon-style mustard

1 tablespoon fresh lemon juice

1 tablespoon chopped garlic

2 pounds medium raw shrimp, shelled, deveined, with tails attached

1 tablespoon chopped fresh parsley

Directions:

1. Preheat oven to 450 degrees F (230 degrees C).

22. In a small saucepan over medium heat, combine the butter, mustard, lemon juice, garlic, and parsley. When the butter melts completely, remove from heat.

3. Arrange shrimp in a shallow baking dish. Pour the butter mixture over the shrimp.

4. Bake in preheated oven for 12 to 15 minutes or until the shrimp is pink and opaque.

Yummy Black Bean Veggie Burger

To make this Yummy Black Bean Veggie Burger, You’ll need the following Ingredients:

Ingredients:

1 (16 ounces) can black beans, drained and rinsed

1/2 green bell pepper, cut into 2-inch pieces

1/2 onion, cut into wedges

3 cloves garlic, peeled

1 egg

1 tablespoon chili powder

1/2 cup bread crumbs

1 tablespoon cumin

1 teaspoon Thai chili sauce or hot sauce

Directions:

1. If grilling, preheat an outdoor grill for high heat, and lightly oil a sheet of aluminium foil. If baking, preheat oven to 375 degrees F (190 degrees C), and lightly oil a baking sheet.

2. In a medium bowl, mash black beans with a fork until thick and pasty.

3. In a food processor, finely chop bell pepper, onion, and garlic. Then stir into mashed beans.

4. In a small bowl, stir together egg, chili powder, cumin, and chili sauce.

5. Stir the egg mixture into the mashed beans. Mix in bread crumbs until the mixture is sticky and holds together. Divide mixture into four patties.

6. If grilling, place patties on foil, and grill about 8 minutes on each side. If baking, place patties on a baking sheet and bake about 10 minutes on each side.

TASTY BROILED TILAPIA PARMESAN

To make this Tasty Broiled Tilapia Parmesan, You’ll need the following Ingredients:

Ingredients:

1/2 cup Parmesan cheese

1/4 cup butter, softened

3 tablespoons mayonnaise

2 tablespoons fresh lemon juice

1/4 teaspoon dried basil

1/4 teaspoon ground black pepper

1/8 teaspoon onion powder

1/8 teaspoon celery salt

2 pounds tilapia fillets

Directions:

1. Preheat your oven’s broiler. Grease a broiling pan or line pan with aluminium foil.

2. In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Mix well and set aside.

3. Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to overcook the fish.

When she made stews we mostly found dumplings in them. We never ate things from packages or microwaves and you sure could taste what food was. That’s the only way I cook today – I don’t use any electronic gadgets to cook with except an electric stove.”

1 small butternut squash, cubed

2 red bell peppers, seeded and diced

1 sweet potato, peeled and cubed

3 Yukon Gold potatoes, cubed

1 red onion, quartered

1 tablespoon chopped fresh thyme

2 tablespoons chopped fresh rosemary

1/4 cup olive oil

2 tablespoons balsamic vinegar

Salt and freshly ground black pepper

Directions:

1. Preheat oven to 475 degrees F (245 degrees C).

2. In a large bowl, combine the squash, red bell peppers, sweet potato, and Yukon Gold potatoes. Separate the red onion quarters into pieces, and add them to the mixture.

Easy Lamb Chops with Balsamic Reduction

To make this Easy Lamb Chop with Balsamic Reduction, You’ll need the following Ingredients:

3/4 teaspoon dried rosemary

1/4 teaspoon dried basil

1/2 teaspoon dried thyme

Salt and pepper to taste

4 lamb chops (3/4 inch thick)

1 tablespoon olive oil

1/4 cup minced shallots

1/3 cup aged balsamic vinegar

3/4 cup chicken broth

1 tablespoon butter

Directions:

1. In a small bowl or cup, mix together the rosemary, basil, thyme, salt and pepper. Rub this mixture onto the lamb chops on both sides. Place them on a plate, cover and set aside for 15 minutes to absorb the flavors.

2. Heat olive oil in a large skillet over medium-high heat. Place lamb chops in the skillet, and cook for about 3 1/2 minutes per side for medium-rare, or continue to cook to your desired doneness. Remove from the skillet, and keep warm on a serving platter.

3. Add shallots to the skillet, and cook for a few minutes, just until browned. Stir in vinegar, scraping any bits of lamb from the bottom of the skillet, then stir in the chicken broth. Continue to cook and stir over medium-high heat for about 5 minutes, until the sauce has reduced by half. If you don’t, the sauce will be runny and not good. Remove from heat, and stir in the butter. Pour over the lamb chops, and serve.

To make this Sweet Sauteed Apple, You’ll need the following Ingredients:

Ingredients:

1/4 cup butter

4 large tart apples – peeled, cored and sliced 1/4 inch thick

1/2 cup cold water

2 teaspoons cornstarch

1/2 cup brown sugar

1/2 teaspoon ground cinnamon

Directions:

1. In a large skillet or saucepan, melt butter over medium heat; add apples. Cook, stirring constantly, until apples are almost tender, about 6 to 7 minutes.

2. Dissolve cornstarch in water; add to skillet. Stir in brown sugar and cinnamon. Boil for 2 minutes, stirring occasionally. Remove from heat and serve warm.

Sweet Sauteed Apple

"Sweet sautéed apple recipe has been my go-to for breakfast lately! This is great for any meal but is great for breakfast. The syrup from the apples is great on homemade waffles. You may add raisins to the sauce if you wish."

Ingredients
  

  • 1/4 cup butter
  • 4 large tart apples - peeled, cored and sliced 1/4 inch thick
  • 2 tsp cornstarch
  • 1/2 cup cold water
  • 1/2 cup brown sugar
  • 1/2 tsp ground cinnamon

Instructions
 

  • In a large skillet or saucepan, melt butter over medium heat; add apples. Cook, stirring constantly, until apples are almost tender, about 6 to 7 minutes.
  • Dissolve cornstarch in water; add to skillet. Stir in brown sugar and cinnamon. Boil for 2 minutes, stirring occasionally. Remove from heat and serve warm.

HOMEMADE HUMMUS

To make this Homemade Hummus, You’ll need the following Ingredients:

Ingredients:

2 cups canned garbanzo beans, drained

1/3 cup tahini

1/4 cup lemon juice

1 teaspoon salt

1 tablespoon olive oil

2 cloves garlic, halved

1 pinch paprika

1 teaspoon minced fresh parsley

Directions:

1. Place the garbanzo beans, tahini, lemon juice, salt and garlic in a blender or food processor. Blend until smooth. Transfer mixture to a serving bowl.

2. Drizzle olive oil over the garbanzo bean mixture. Sprinkle with paprika and parsley.
