Meatballs:

1 ½ pound Ground Beef, 85% lean

3 tbsp Olive Oil

½ Yellow Onion, finely diced

2 cloves Garlic, minced

1 large Egg

1 tsp Yellow Mustard

1 tbsp Ketchup

1 tsp Worcestershire Sauce

¼ c. Breadcrumbs, Plain or Italian

2 tsp Fresh Parsley, roughly chopped

½ tsp Salt

¼ tsp Pepper

Gravy:

1 tbsp Unsalted Butter

1 medium Yellow Onion, sliced into ½” strings

1 c. Chicken Broth

½ tsp Garlic Powder

1 c. Beef Broth

1 tsp Onion Powder

1 ½ tsp Worcestershire Sauce

1 Beef Bouillon Cube, or 1 teaspoon Better than Bouillon

1/4 c. cold water + 3 tbsp Corn Starch

2-3 drops Kitchen Bouquet browning and seasoning sauce, optional

How to make Meatballs and Gravy

Tip:

To help the meatballs stay together during cooking, place the meatballs in the fridge for about 15 minutes after rolling them.

Meatballs:

Step 1: In a large bowl, add the meatballs ingredients except for the olive oil. Mix until just combined, making sure not to over-mix the meat. Then, roll the mixture into a 1 1/2-inch meatball.

Step 2: In a large nonstick skillet, heat the olive oil over medium heat. Once the oil is hot, add the meatballs (about 5 – 6 pieces at a time) to the skillet and cook on each side for about 2 minutes. On a plate, transfer the meatballs when done. Do the same for the remaining meatballs.

Step 3: Adjust the heat to medium and add any drippings/oil from the plate with the meatballs to the pan along with 1 tbsp butter. Once the butter has melted, add the sliced onion to the skillet and cook for about 5 minutes, stirring occasionally until tender and slightly caramelized.

Gravy:

Step 4: To the skillet, add the chicken broth, beef broth, beef bouillon, onion powder, garlic powder, and Worcestershire sauce. Mix well. Scrape any browned bits from the bottom of the pan using a silicone spatula.

Step 5: Next, add 2 to 3 drops of Kitchen Bouquet browning and seasoning sauce. This step is optional but recommended if you prefer a darker color.

Step 6: In a small Tupperware with a lid, whisk the cold water and cornstarch, Shake well.

Step 7: Once the gravy is boiling, stir in the cornstarch mixture. Then, adjust the heat to medium-low and continue stirring until the gravy is smooth.

Finish Cooking:

Step 8: Return the meatballs to the skillet and continue to cook for another 10 minutes until the meatballs are cooked through.

Step 9: Before serving, garnish with some parsley. Enjoy the meatballs and gravy over mashed potatoes.

Meatballs and Gravy

by Rebecca July 18, 2022
written by Rebecca

Prep Time: 20 mins | Cook Time: 35 mins | Total Time: 55 mins | Servings: 4

Flavor-packed meatballs smothered in a rich and creamy gravy. These meatballs and gravy are the best meal to treat your family to a very comforting, filling dinner!

Ingredients

Meatballs:

1 egg – slightly beaten

1 lb Ground Beef (use ground round. I don’t recommend using anything too lean as we want some fat for flavor)

½ tsp Garlic Powder

¼ tsp Black Pepper

½ tsp Onion Powder

¼ c. Bread Crumbs plain

Canola Oil for frying – enough to cover the bottom of a large, deep skillet with ¼ – ½” of oil (about 1½ c.)

1 tsp Salt

Gravy:

2 c. Beef Broth

3 tbsp Flour

½ c. Half & Half

3 tbsp Butter

How to make Meatballs and Gravy

Meatballs:

Step 1: In a large bowl, place the ground beef and add the salt, garlic powder, onion powder, black pepper, egg, and bread crumbs. Using your hands, mix well until the ingredient are just combined. Make sure not to overwork the meat.

Step 2: Into rounds, shape the ground beef, just a bit smaller than a golf ball to make about 20 meatballs.

Step 3: To a large, deep skillet, pour enough oil to cover the bottom by around ¼ – ½ inch (about 1½ cups) and heat over medium-high. Once the oil is hot, add the meatballs to the skillet and fry for about 5 to 6 minutes, turning the meatballs a few times until all sides are browned.

Step 4: On a plate or pan, transfer the meatballs when done. Loosely tent the meatballs with aluminium foil or put the plate in the microwave or oven to keep the meatballs warm.

Gravy:

Step 5: To make the gravy, first, drain the oil from the skillet, but do not wipe or wash the skillet.

Step 6: Melt the butter in the same skillet over medium heat. Add the flour once the butter has melted and is foamy. Cook for about 2 minutes, stirring often. Then, gradually pour in the beef broth, stirring until incorporated. Bring the sauce to a simmer and return the meatballs to the skillet. Adjust the heat to medium-low.

Step 7: Put the lid on and cook the meatballs for about 15 minutes, stirring often. Next, stir in the half-and-half.

Step 8: Adjust the heat to low and continue to cook further to allow the flavors to blend. This takes another 3 to 5 minutes. If needed, season the gravy with extra salt.

Step 9: When done, serve the meatballs and gravy immediately over mashed potatoes or egg noodles. These meatballs are also amazing on their own. Enjoy!

CAULIFLOWER AU GRATIN

by Rebecca July 18, 2022
written by Rebecca

Prep Time: 15 mins | Cook Time: 50 mins | Total Time: 1 hr 5 mins | Yield: 8

This Cauliflower Au Gratin is a very delectable casserole with cauliflower and broccoli in a creamy cheddar cheese sauce topped with crumb topping. It’s a very simple recipe that comes together pretty quickly.

INGREDIENTS

4 tbsp unsalted butter

2 large cloves of garlic, minced

1 small head cauliflower, cut into florets

1 small head of broccoli, cut into florets

1 small onion chopped

1/4 c. flour

3/4 c. low sodium chicken broth

1 1/2 c. milk

2 1/4 c. shredded white cheddar

Salt & pepper to taste

Pinch of nutmeg

CRUMB TOPPING:

3 tbsp melted butter

20 Ritz crackers

1/2 tsp onion powder

1 tsp dried oregano

HOW TO MAKE CAULIFLOWER AU GRATIN

Step 1: Prepare the oven. Preheat it to 400 degrees. Using a nonstick baking spray, grease a large baking dish.

Step 2: In the prepared baking dish, place the broccoli and cauliflower. Bake in the preheated oven for about 15 minutes or until very lightly browned.

Step 3: Melt the butter in a large skillet over medium heat. Once the butter has melted, add the onion and cook for about 5 minutes. Then, add the garlic and continue to cook for 30 seconds more. Stir in the four and cook for 90 seconds while whisking continuously. Gradually stir in the milk alternately with the chicken broth. Adjust the heat to low before adding in the cheddar, stirring often, until the cheese has melted and the mixture is smooth and creamy. Mix in the nutmeg, salt, and pepper. Then, pour this over the roasted broccoli and cauliflower.

Step 4: Crush the crackers in a food processor. Add the oregano along with the onion powder and melted butter. Pulse a few times. Then, sprinkle this over the cheese sauce.

Step 5: Return the baking dish to the oven and resume baking the casserole for 25 to 30 minutes or until light golden brown.

NOTES:

You can use just cauliflower or broccoli or a combination of the two.

Make sure to dry the cauliflower and broccoli well after washing and cutting them.

For easy cleanup, grease the casserole dish using nonstick cooking spray.

Place the casserole in the middle rack of the preheated oven.

I highly recommend using good-quality cheddar cheese.

Feel free to swap Ritz crackers with fresh ground croutons or bread crumbs.

Set aside a bit of cheddar and sprinkle this over the crushed crackers for added flavor.

For this recipe, you can use Gouda, Gruyere, and Monterey Jack. Or mix them up.

Decadent and amazingly rich – this heavenly Southern Caramel Cake with loads of sweet icing is the perfect cake for all occasions!

Ingredients

Cake:

4 eggs

3/4 c. butter (1 1/2 sticks)

1 tsp vanilla extract

1 c. milk

2 3/4 tsp baking powder

2 c. sifted all-purpose flour

1/2 tsp salt

2 c. sugar

Caramel Icing:

1/2 c. butter

1 box of light brown sugar (1 lb.)

1 tsp vanilla extract

7 tbsp evaporated milk

How to make Southern Caramel Cake

Step 1: Prepare the oven. Preheat it to 325 degrees. Ready two 9-inch cake pans. Grease, flour, and set aside.

Step 2: Place the butter and milk in a small saucepan. Cook over low heat until the butter has melted. Stir well and allow the mixture to cool to room temperature.

Step 3: Place the flour, baking powder, and salt in a medium bowl. Mix well until blended.

Step 4: Beat the egg and sugar using an electric mixer on high speed until light yellow and smooth. Whisk in the flour until just incorporated. Then, add the cooled milk mixture along with the vanilla. Mix well.

Step 5: Between the prepared pans, divide the batter. Place in the preheated oven and bake for about 25 to 30 minutes or until the cake springs back when lightly touched in the middle.

Step 6: On a wire rack, place the pans and allow the cake to cool for 10 minutes. Then, take the cakes out of the pans and allow them to cool completely.

Step 7: To make the icing, place the brown sugar, butter, evaporated milk, and vanilla extract in a medium saucepan with a heavy bottom. Stir well and bring the mixture to a boil over medium-high heat. Stir and decrease the heat to gently boil the icing. Cook for about 7 minutes. When done, let the icing cool for about 5 minutes.

Step 8: Using a wooden spoon, beat the icing for about 2 to 3 minutes or until thickened.

Step 9: On a platter or cake stand, place the bottom layer of the cake. Spread the icing on top, working quickly before the icing sets. On top, place the second cake layer and ice the top and sides. Using a knife dipped in hot water, smooth the icing out.
