This Cauliflower Au Gratin is a very delectable casserole with cauliflower and broccoli in a creamy cheddar cheese sauce topped with crumb topping. It’s a very simple recipe that comes together pretty quickly.
INGREDIENTS
4 tbsp unsalted butter
2 large cloves of garlic, minced
1 small head cauliflower, cut into florets
1 small head of broccoli, cut into florets
1 small onion chopped
1/4 c. flour
3/4 c. low sodium chicken broth
1 1/2 c. milk
2 1/4 c. shredded white cheddar
Salt & pepper to taste
Pinch of nutmeg
CRUMB TOPPING:
3 tbsp melted butter
20 Ritz crackers
1/2 tsp onion powder
1 tsp dried oregano
HOW TO MAKE CAULIFLOWER AU GRATIN
Step 1: Prepare the oven. Preheat it to 400 degrees. Using a nonstick baking spray, grease a large baking dish.
Step 2: In the prepared baking dish, place the broccoli and cauliflower. Bake in the preheated oven for about 15 minutes or until very lightly browned.
Step 3: Melt the butter in a large skillet over medium heat. Once the butter has melted, add the onion and cook for about 5 minutes. Then, add the garlic and continue to cook for 30 seconds more. Stir in the four and cook for 90 seconds while whisking continuously. Gradually stir in the milk alternately with the chicken broth. Adjust the heat to low before adding in the cheddar, stirring often, until the cheese has melted and the mixture is smooth and creamy. Mix in the nutmeg, salt, and pepper. Then, pour this over the roasted broccoli and cauliflower.
Step 4: Crush the crackers in a food processor. Add the oregano along with the onion powder and melted butter. Pulse a few times. Then, sprinkle this over the cheese sauce.
Step 5: Return the baking dish to the oven and resume baking the casserole for 25 to 30 minutes or until light golden brown.
NOTES:
You can use just cauliflower or broccoli or a combination of the two.
Make sure to dry the cauliflower and broccoli well after washing and cutting them.
For easy cleanup, grease the casserole dish using nonstick cooking spray.
Place the casserole in the middle rack of the preheated oven.
I highly recommend using good-quality cheddar cheese.
Feel free to swap Ritz crackers with fresh ground croutons or bread crumbs.
Set aside a bit of cheddar and sprinkle this over the crushed crackers for added flavor.
For this recipe, you can use Gouda, Gruyere, and Monterey Jack. Or mix them up.
