HAMBURGER STEAKS WITH ONION GRAVY

by Rebecca March 28, 2020
written by Rebecca

When I was young, my family went to local restaurants in the neighborhood. We didn’t have a ton of cash, so these were uncommon events, which we were excited for most of the time. It’s a “once in a while” to go to a restaurant, let alone a group of six of us. During dinner, I always saw my mother getting the Hamburger Steak when it was available. As a kid, we had chicken strips and cheeseburgers to eat. The Hamburger Steak was a grown-up supper. So, I wasn’t grown-up enough for that yet. At that point, when I was in college, something advised me to give it a shot.

Despite the fact that I can’t recall where I was actually, I will always remember that first bite. What the hell? For what reason wasn’t my mother offering this to us? I know why. Because it was tasty! I wouldn’t share it either. Presently, I have my own recipe and I can make them at home for a large portion of the cost with a formula that I found on Relative Taste.

Chicken and Dressing Casserole

by Rebecca March 26, 2020
written by Rebecca

I received this recipe from a friend. My entire family enjoys it and not to mention how easy it’s to create! Side Note: Should you want to, you may simply boil up to 4 or 5 boneless chicken breasts rather than using a whole chicken.

I had an identical recipe years ago but it never really was as delicious as I expected it to be. This one definitely did! Enjoyed every taste!  I made it the night prior to leaving it within the refrigerator overnight and put it in the oven once I came home from work. It was amazing!

How to make Gravy:

Melt butter in a saucepan over moderate heat. Whisk in flour and cook for two minutes.

Reduce heat to low and cook and stir until thick enough to coat the back of a spoon, 4-6 minutes. Stir in heavy cream, and season with salt, pepper, and cayenne pepper.

Serve the casserole with sauce on the top and a big side of sausage.

REAL OLD-FASHIONED PORK CHOP CASSEROLE

by Rebecca March 26, 2020
written by Rebecca

With this dish, you can serve with rice. You can also try baking it with different vegetables, or potatoes. The whole household gave this recipe up a loaf. I cooked mine in the crockpot so the pork chops came out nice and tender. Next time I’d use half of the water called for so that the gravy is a bit thicker but most of us thought the taste was great! Thanks, to Sasha. I recommend cooking this at any cookout, as it feeds lots of men and women! My husband loved it and ate almost the entire dish! Your kids will love them also!

Creamy Beef Tips with Egg Noodles

by Rebecca March 22, 2020
written by Rebecca

Made this Saturday night for dinner and it was a major hit. For these, I decided to add extra ingredients, which is totally optional. I added fresh mushrooms, salt, and pepper while browning the meat and onions on a skillet. I also sat the beef in a crockpot to make it tender with the delicious sauce. If you’re looking to serve something so delicious to your family, I highly recommend this recipe, it’s also very easy to make and prepare. So, check out the recipe below

Cubed sirloin tips baked in cream of mushroom soup, red wine, milk, mixed with beef and beef onion soup mix. Served over egg noodles. Great with dinner rolls or garlic toast.

2 pounds sirloin tips, cubed

1/2 yellow onion, chopped

2 (10.75 ounces) cans condensed cream of mushroom soup

1 cup milk

1/2 cup red wine

1 (1.25 ounce) package beef with onion soup mix

2 (16 ounce) packages egg noodles

Directions

Heat the large skillet over medium heat (or even a slow cooker). Saute beef sirloin tips with your onions in a hot skillet until the beef is browned for about 10-minutes.Stir cream of mushroom soup, red wine, milk, and beef together with onion soup in a mixing bowl. Now, pour into the skillet, and stir to cover the meat in the soup mixture. Bring it into a simmer, decrease the heat to low, place a cover on the skillet, and cook the beef tips until tender for about 2 – 3 hours.

Decrease the heat to the lowest setting and proceed cooking until the beef pulls apart quickly with a fork, at least 4 hours more.

Bring a large pot of mildly salted water to a boil. Cook egg noodles in hot water, occasionally stirring until cooked through but firm for about 5 minutes. Then Drain.

Now, lay the beef tips stew over egg noodles.

You can call this soup or chili, but either way, it is wonderful! This recipe is also very adaptable to your personal taste. I recommend using Bill Echols’ Taco Seasoning from this website. Serve topped with shredded Cheddar cheese, a dollop of sour cream, and crushed tortilla chips, if you like. I hope you enjoy!

Ingredients

1 onion, chopped

1 (16 ounces) can chili beans

1 (15 ounces) can black beans

1 (15 ounces) can whole kernel corn, drained

1 (8 ounces) can tomato sauce

1 (12 fluid ounce) can or bottle beer

2 (10 ounces) cans diced tomatoes with green chilies, undrained

1 (1.25 ounce) package taco seasoning

3 whole skinless, boneless chicken breasts

1 (8 ounces) package shredded Cheddar cheese (optional)

sour cream (optional)

crushed tortilla chips (optional)

Directions

Place the onion, chili beans, black beans, corn, tomato sauce, beer, and diced tomatoes in a slow cooker. Add taco seasoning, and stir to blend. Lay chicken breasts on top of the mixture, pressing down slightly until just covered by the other ingredients. Set slow cooker for low heat, cover, and cook for 5 hours.

Remove chicken breasts from the soup, and allow to cool long enough to be handled. Stir the shredded chicken back into the soup, and continue cooking for 2 hours. Serve topped with shredded Cheddar cheese, a dollop of sour cream, and crushed tortilla chips, if desired.

Crispy Crunchy Parmesan Potatoes

My father was the only person that would consider a potato meal. He would always make us potatoes when we were kids and we loved it! It was baked in the oven and when it was done, he’d season and butter it. As an adult, I love potatoes, but as a side dish to a meal. It was until I found out about Crispy Crunchy Parmesan Potatoes that I fell in love! It doesn’t cost much to make and it’s relatively easy.

During the quarantine, I decided to cook my family baked chicken (that was hard to find) with macaroni and rice. I decided to try these out for an even more delicious meal. My kids loved the smell and were curious about what I was cooking. They usually don’t eat potatoes, but after they were done, the entire plate was gone within a few minutes. They loved them! My husband was praising how good they taste and wanted more, but we were out of potatoes!

I ate my entire dish and oh boy, the crips and crunchiness made them even better. I barely ate the baked chicken that I had. The kids were begging to have mine, but they were definitely denied! I hope to make more of this, especially with my kid’s favorite of meatloaf. Soon, once coronavirus is over, we’ll have guests over and I’m thinking of serving them with sour cream and ketchup. Everyone loves these as snacks and wanted the recipe for themselves! Not only do they fill you up quickly, but they have an affordable price!
