written by Rebecca

Serves: 10 | Prep: 15 Min | Cook: 45 Min

Sugar-free? Yes, please! This pandemic made me realize that I have to take care of myself more. So I am extra conscious of the food I eat and cook. It was very hard when I started because I am used to take-outs, ready-to-eat-just-microwave type of meal, and numerous amount of caffeine. I work fifteen hours every day, mostly night time, and I need something to keep me awake and something easy-and-quick. I have been leaving like this since the day I started to work. Until I decided to change everything! I can’t remember the last time that I felt light and amazing. Special mention to this Sugar-Free Apple Cream Cheese Cake! I can devour this all I want without feeling guilty. Plus, it is so freaking easy to prepare, and undeniably delicious! One of the best sugar-free cakes of all time!

Ingredients

1 box sugar-free yellow cake mix

1/3 cup oil

1/4 cup water

2 eggs

1 teaspoon vanilla extract

1 box Neufchatel cream cheese, softened

1 can no sugar added apple pie filling

How to Make Sugar Free Apple Cream Cheese Cake

Step 1: Prepare the oven. Preheat it to 350 degrees and ready a 13 x 9-inch baking dish.

Step 2: Combine the cake mix, oil, water, and eggs with an electric mixer. Make sure to blend well before adding in the vanilla. Mix well, then, add in the cream cheese.

Step 3: Once well mixed, stir in the pie filling and blend long enough so it’ll be completely incorporated into the batter.

Step 4: Transfer the batter into the prepared dish.

Step 5: Place inside the preheated oven and bake for approximately 30 to 45 minutes, depending on your pan. To check the doneness, insert a toothpick in the middle. Once it comes out clean, the cake is done.

Step 6: Remove the cake from the oven and allow it to cool before cutting into squares.

Oven Baked Meatball Sandwiches

by Rebecca August 8, 2020
written by Rebecca

So good your mouth will water for more! These easy and quick sandwiches are perfect for busy days. My go-to for game nights and a filling on-the-go meal. And these delish baked meatball sandwiches can easily feed the crowd!

I love how simple and straightforward this is. All you need are sandwich rolls, cooked meatballs, pasta sauce, and shredded mozzarella cheese. These sandwiches are packed, freaking delicious with gooey cheese on top. These babies have been the most requested, especially during game nights. Good thing these are a breeze to make because I usually make them in batches. Serve them immediately and they are gone in a blink! This is a real keeper and perfect for a busy bee like me. I just pop these in the oven and when I’m done preparing, grab one and go!

Ingredients

Sandwich rolls (cut with one side intact)

Cooked Meatballs (your favorite recipe or frozen, pre-made meatballs)

Pasta Sauce (homemade or jarred)

Shredded Mozzarella Cheese

How to make Oven Baked Meatball Sandwiches

Step 1: Using a cooking spray, grease a baking sheet.

Step 2: Prepare the oven. Preheat it to 400 degrees F.

Step 3: In a large pot, place the frozen cooked meatballs or homemade cooked meatballs. Pour in the pasta sauce enough to cover the meatballs. Then, gently fold the meatballs with the sauce and heat on low medium heat. Occasionally stir until heated through.

Step 4: Stuff a roll with as many meatballs, about 4 to 5 pieces of meatballs can fit in the roll depending on the size of rolls and meatballs. Top it with more pasta sauce from the pot and transfer the filled rolls on the prepared baking sheet closely to each other. Sprinkle over shredded mozzarella cheese.

Step 5: Place inside the preheated oven and bake until bubbly and the cheese is melted. Enjoy!

written by Rebecca

Serves: 8-10 | Prep: 5 Min | Cook: 45 Min

If you are looking for something easy and quick to make, look no more! I present you this Poor Man’s Apple Cobbler. It is so good you’ll make this every chance you get. I have been making this for years now and it never fails me. This is a keeper and a must-have cobbler recipe!

Growing up, I always have crazy love for food. I even planned to take culinary when I was younger but because I diverted to arts, I took designs instead. However, my love for food remains and grew stronger over the past years. Every day, I searched for new recipes to try. I also travel for food. I have been to many places, appreciated, and tried every cuisine I can lay my hands to. I have many favorites and one of them is this Apple Cobbler because it is way too simple, a no-fuss, and the easiest. The ingredients are readily available and all you need to do is pour everything in a glass dish or baking dish. Then, pop in the oven for a few minutes and boom! I adore how the crust rises above the apples.

Ingredients

1 cup of sugar

1 cup self-rising flour

1 can pie filling (apple, cherry, or peach) or fresh fruit

1 stick butter, unsalted

1 cup milk

1 teaspoon vanilla extract

How to Make Poor Man’s Apple Cobbler

Step 1: Prepare the oven. Preheat it to 350 degrees.

Step 2: In a 9 x 13-inch baking dish or preferably glass, melt the butter. Then, pour in the sugar, flour, vanilla, and milk. Make sure to not mix the ingredients with the butter. Just add them to the butter.

Step 3: Place a spoonful of your desired fruit in random spots.

Step 4: Place inside the preheated oven and bake for about 45 minutes. The crust will rise throughout the apples.

Step 5: Once done, remove from the oven and serve immediately. Enjoy!

Adore this! I have been loving this cornbread cake for a while now. It is so great. I can’t resist having another bite!

A friend taught me how to make this. At first, I was a bit hesitant. I thought, cornbread but no cornmeal? Contrary to its name, Georgia Cornbread Cake this is more like a pecan cake or pecan coffee cake. This cake is intriguing so I gave it a try! And wow! It’s nothing I’ve ever tasted before! So good for such a simple cake. What I love most about this is that the ingredients are very simple and the recipe is pretty straightforward. Nothing fancy except the name which is still a puzzle to me. My kids love this cake and my husband is obsessed! Whenever I am making this cake, he always pops his head in the kitchen to check if it is done! This cornbread cake is so freaking delicious and a real keeper!

Ingredients

4 large eggs

1 cup of sugar

1 cup brown sugar, firmly packed

1 teaspoon vanilla extract

1 1/2 cups self-rising flour

2 cups chopped pecans

How to Make Georgia Cornbread Cake

Step 1: Beat the eggs in a large bowl.

Step 2: Stir in the sugar, brown sugar, and vanilla. Combine well.

Step 3: Add in the flour and mix until incorporated.

Step 4: Then, fold in the nuts and mix.

Step 5: Once the mixture is mixed well, pour into a greased 9 x 13-inch pan. You can use a metal pan as I did.

Step 6: Place inside the oven and bake at 350 degrees F for about 35 minutes.

Step 7: Once done, remove from the oven and allow the cake to fully cool before cutting. Please note that the center of the cake will be kind of soft. This cake makes 24 to 28 squares, depending on how big you slice it.

I love nice moist, melt-in-your-mouth pork chops with beans and classic mashed potato for dinner. My comfort meal with a glass of iced water. These savory chops are easy to prepare and it takes only a few simple ingredients to make. The spices used added fabulous flavors to these chops. I know you’ll love these more than I do. Delicious, juicy, fork-tender chops with satisfying and burst in your mouth flavor.

I’ve made these crazy delicious chops just yesterday and now I am craving for it again! It is so good, I still want more! I think I’ll be making this again tonight. I bet no one will complain because everyone is insanely obsessed with these Pork Chops!

Ingredients

8 pork chops or pork cube steaks or boneless chicken

1/2 teaspoon ea. granulated garlic & onion, blk pepper, paprika, mixed

1 cup flour or panko optional

1 cup canola oil or olive oil

How to Make Pork Chops that Melt in Your Mouth

Step 1: In a skillet, place enough oil to almost cover the bottom. Heat to medium-high heat.

Step 2: While waiting for the oil to get a hot, season, and lightly flour the chops. In case you are using a panko, rub the chops first with olive oil to help the panko adhere to the meat.

Step 3: Prepare the oven. Preheat it to 375 degrees.

Step 4: When the oil is hot, place the chops in the skillet and cook until both sides are lightly browned. Then, transfer the chops onto the baking sheet. You may grease the baking sheet with cooking spray but this step is not needed unless the meat is very lean.

Step 5: Place inside the preheated oven and bake for approximately 35 minutes or longer depending on how thick the chops.

NOTE: Adjust the baking time if you are using cube steak to about 20 minutes.

OLD FASHIONED BLUE RIBBON POUND CAKE

by Rebecca August 7, 2020
written by Rebecca

Prep Time: 15 mins | Cook Time: 1 hr 30 mins | Total Time: 1 hr 45 mins | Servings: 20 slices

The perfect homemade pound cake ever existed! It is thick, moist, buttery, and not overwhelmingly sweet. This cake has a crusty edge and a nice, smooth, creamy, small crumb on the inside. A genuine classic cake that is loved by many.

Ingredients

2 cups butter, no substitutes salted or unsalted, at room temperature

3 and 1/2 cup granulated sugar

10 large eggs at room temperature

4 cups all-purpose flour sifted (always sift, then measure)

2 teaspoons vanilla extract

HOW TO MAKE OLD FASHIONED BLUE RIBBON POUND CAKE

Step 1: Let the butter and eggs come to room temperature.

Step 2: Grease and flour a 10 to 15 cup bundt pan. A standard bundt pan is smaller and the cake is too large so it is recommended to use a larger bundt pan. If a tube or bundt pan is not available, then, it is okay to use a regular pan and make the extra butter into cupcakes. When filling the pan, leave 2 inches space from the top or it may overflow. But first, line the sides of the tube pan with waxed paper.

Step 3: Prepare the oven. Preheat it to 350 degrees.

Step 4: In a bowl, cream 2 cups of butter until soft making sure there are no lumps. Stir in 3 and 1/2 cups of granulated sugar and continue to cream until light and fluffy. Next, add in the eggs. Beat well every after each addition.

Step 5: Adjust the speed of the mixer to low and gradually add in 4 cups of sifted all-purpose flour. Stir in the vanilla and mix until incorporated.

Step 6: Transfer the batter into the prepared tube or bundt pan.

Step 7: Place inside the preheated oven and bake for about an hour and 20 minutes. Check the doneness by inserting a toothpick in the middle, when it comes out clean, then, the cake is set.

Step 8: Remove the cake from the oven and let it cool for at least 30 minutes on a wire rack before inverting it onto a serving plate.

NOTE: This cake recipe does not use baking soda or baking powder. Also, remember that baking time depends on your oven and pans you are using. It is recommended to check the cake before the time. If the cake becomes too dry, you baked it too long.

Georgia Peach Cobbler

by Rebecca August 7, 2020
written by Rebecca

Serves: 6-8 | Prep: 10 minutes | Cook: 40 minutes

I grew up to this cobbler. It is the most amazing treat. Crispy on top, gooey and hot on the inside. This Peach Cobbler is the highlight of your meal. Nothing beats a good old cobbler with your favorite ice cream or whipped cream for dessert. This is one of the simplest, easy desserts that your family will immediately fall in love with.

Ingredients

3/4 cup plus 2 tbsp granulated sugar

1 cup self-rising flour

1/4 cup plus 1/4 cup (1 stick) butter, melted

1 can(28 ounces) sliced peaches, undrained

How to Make Georgia Peach Cobbler

Step 1: Prepare the oven. Preheat it to 350 degrees F.

Step 2: Use a non-stick spray to grease an 8 x 11-inch baking dish and set aside.

Step 3: Coarsely mix 3/4 cup of sugar, flour, and 1/4 cup of melted butter in a medium-size mixing bowl. Then, sprinkle about 1/3 of the mixture on the bottom of the prepared baking dish.

Step 4: Top the first layer with peaches and juice. In case the juice from the peaches can’t cover the peaches, add in a small amount of water enough to cover the peaches. Remember that too little liquid will make the cobbler dry and too much liquid will make it soupy.

Step 5: Cover the peaches with the rest of the sugar-flour mixture. Then, sprinkle over 2 tablespoons of sugar and 1/4 cup butter.

Step 6: Place inside the preheated oven and bake for about 30 to 40 minutes or until bubbly and brown.

Step 7: Once done, remove the cobbler from the oven and serve immediately.

TIP: If you choose to use fresh peaches, peel and slice them first. Then, sprinkle the sliced peaches with half a cup of sugar. Place in the fridge to chill for at least 2 to 3 hours before using it.

A substitute if self-rising flour is unavailable is all-purpose flour. Equivalent to 1 cup of self-rising flour is:

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon baking soda

Mountain Dew Pound Cake
