EASY OVEN-BAKED CHICKEN BREASTS OR THIGHS

This is an easy recipe you can try for tonight’s dinner! Everyone is going to love these Oven-Baked Chicken, for sure! You only need a few ingredients for this. You can either use chicken breasts or thighs. Enjoy!

Ingredients:

1.5 pounds chicken breasts and/or thighs (bone-in and skin-on)

3 cloves fresh garlic, minced

2 tbsp olive oil

1 tsp Italian seasoning

1 tsp salt

salt and freshly cracked pepper, to taste

juice from 1 lemon

1/2 tsp paprika

1/2 tsp Italian seasoning

1 tsp black pepper

juice from 1 orange

Directions:

In a large resealable bag, add all the ingredients aside from the chicken breasts. Shake the bag to combine everything.

Add the chicken inside the bag, then shake it again to coat.

Place the bag in the fridge to marinate the chicken for at least an hour.

Prepare the oven and preheat it to 190 degrees C or 375 degrees F.

Remove the chicken breasts from the marinade and place them into a baking pan. Season with a bit more salt, pepper, and Italian seasoning.

Place the pan in the preheated oven and bake the chicken breasts for about 55 minutes or until done.

Remove from the oven and allow the chicken breasts to rest for at least 5 minutes at room temperature.

Serve warm and enjoy!

Notes:

Use can use an instant-read thermometer to check the doneness of the chicken. It should read about 165 degrees F.

Place any leftovers in an airtight container, then put them in the fridge. They can last up to 3 days or 4 months in the freezer. Reheat for a few minutes before serving again.

Wendy’s Copycat Chili in the Slow Cooker

You will not suspect that this recipe is just a copycat because it is the real deal! Cooked to perfection for 8 hours, this Wendy’s Copycat Chili is one to try! You will be so glad that you gave this recipe a try!

Ingredients:

3 ribs celery, chopped

1 green bell pepper, chopped

1/4 c chili powder

2 pounds of ground beef

2 (14.5 oz. cans) diced tomatoes, not drained

1 (29 oz. can) kidney beans, drained

1 (29 oz. can) pinto beans, drained

1 (29 oz.) can of tomato sauce

1 yellow onion, diced

1 tbsp cumin powder

2 c beef broth

1 tbsp sugar

1 tsp black pepper

1/2 tsp salt

Directions:

Place a skillet on the stove and turn the heat to medium-high. Add a bit of oil and allow it to become hot.

Add the ground beef into the hot skillet, then cook for a few minutes until crumbly and brown. Discard any accumulated grease.

Transfer the browned beef to a 6-quart slow cooker.

Put the rest of the ingredients for the chili into the slow cooker with the browned beef. Stir everything until well incorporated.

Cover and seal the slow cooker, then cook the chili for about 8 to 10 hours on a low setting or 4 to 6 hours on a high setting.

Spoon the chili into serving bowls.

Serve right away. Enjoy!

Notes:

Dissolve 2 beef bouillon cubes in 2 cups of water in exchange for broth.

You can cook this on the stove. Brown the beef into a large pot, then add all the ingredients. Stir and cook for about an hour over low heat.

Place any leftovers in an airtight container, then put them in the fridge. Reheat for a few minutes before serving again.

Creamy Pork Chops Marsala

The sauce alone of these Creamy Pork Chops Marsala is more than enough to satisfy your cravings! It will only take you less than an hour to prepare and cook this dish. It is surely a must-try!

Ingredients:

1 large shallot, chopped (about 1/3 c)

3/4 c dry Marsala wine

1/4 c all-purpose flour, plus 2 tbsp

1 tbsp olive oil

8-10 oz. cremini mushrooms, cleaned, stems removed, and caps cut into 1/4-inch slices

4 thin-cut boneless pork chops (1/4- to 1/2-inch thick)

1/3 c heavy cream

kosher salt and freshly ground black pepper

1 tbsp fresh thyme leaves, chopped

2 tbsp unsalted butter

1 tsp fresh rosemary, chopped

1/2 c chicken stock

Directions:

Sprinkle salt and pepper over the pork chops, then rub each to coat.

Cover each pork chop with flour as well and remove any excess by shaking it.

Place a large skillet on the stove and turn the heat to medium-high. Add oil and butter, then allow them to become hot.

Add the pork chops into the hot skillet, then cook each side for about 3 minutes or until they turn golden brown. Move them onto a clean plate and cover them with foil.

In the same skillet, add mushrooms and shallots. Sauté for a few minutes until soft. Season with salt and pepper to taste.

Add 2 tbsp of flour, then whisk and cook for about a minute to remove the raw taste.

Add the Marsala, then stir and cook for about 2 minutes. Make sure to scrape the bottom of the skillet to get the browned bits.

Pour in chicken stock and stir until well blended. Allow the mixture to boil. Reduce the heat to low, then simmer everything for about 5 minutes or until the texture of the sauce becomes thick.

Add heavy cream, thyme, and rosemary. Stir until well blended. Add more salt and pepper to taste.

Put the pork chops back into the skillet, then toss until completely coated with the delicious sauce. Let it simmer for 2 more minutes.

Remove from the heat and sprinkle freshly chopped herbs on top to garnish.

Serve right away over noodles or mashed potatoes. Enjoy!

OR 2 tablespoons Italian Herb Seasoning Blend

1/2 teaspoon dried sage

1 tablespoon Celtic Sea salt and fresh cracked pepper

1 bottle Italian Salad Dressing (optional marinade)

1 teaspoon dried oregano

Directions:

Prepare the oven and preheat it to 175 degrees C or 350 degrees F.

Line the inside of a baking sheet with foil.

Add basil, sage, parsley, oregano, thyme, and garlic into a mixing bowl. Whisk everything until well incorporated.

Sprinkle salt and pepper over the meat, then rub it to coat.

Place a large pan on the stove and turn the heat to medium. Add oil and allow it to become hot. Add the meat, then sear each side for a few minutes until brown. Transfer it onto the prepared baking sheet.

3-4 lbs. St Louis Ribs

For the Spice Rub:

2 teaspoons black pepper

1 tablespoon garlic powder

1 tablespoon brown sugar

Directions:

Transfer the mixture onto a foil pan and spread it evenly.

Prepare the oven and preheat it to about 175 degrees C or 350 degrees F.

Place the pan in the preheated oven and bake for about an hour or until an inserted instant-read thermometer reads about 180 degrees C.

Remove from the oven and discard any accumulated grease.

Cover the pan with foil and put a heavy-weight object over it to compress the gyro. Allow it to sit for at least half an hour.

French Onion Chicken Meatballs

The combination of caramelized onions and meatballs never gets old for me! These French Onion Chicken Meatballs are one of my comfort foods! This dish is ready in just about an hour. It is a total family favorite!

Ingredients:

FOR THE MEATBALLS:

1/2 cup shredded Gruyere

2 cloves garlic, minced

Freshly ground black pepper

2 tablespoons freshly chopped parsley

1 teaspoon kosher salt

1 pound ground chicken

2 tablespoons extra-virgin olive oil, for the baking sheet

1/4 cup bread crumbs

1 large Egg, beaten

FOR THE SAUCE:

2 cups low-sodium beef broth

2 large onions, thinly sliced

4 tablespoons butter

1 1/2 cups shredded Gruyere

2 cloves garlic, minced

Freshly ground black pepper

2 teaspoons freshly chopped thyme, plus more for garnish

Kosher salt

Directions:

Prepare the oven and preheat it to 218 degrees C or 425 degrees F.

Line with foil and apply cooking spray to a large baking sheet.

Add garlic, Gruyere, salt, ground chicken, parsley, pepper, and egg into a large bowl. Use your clean hands to mix everything until well incorporated. Form about 16 meatballs out of the mixture.

Lay the meatballs onto the prepared baking sheet and arrange them in a single layer.

Put the baking sheet in the preheated oven and bake the meatballs for about 25 minutes or until they turn golden brown.

Place a large skillet on the stove and turn the heat to medium. Add butter and allow it to melt. Add the onions, then stir and cook for 25 minutes or until they caramelize. Stir in the garlic and sauté just until aromatic.

Add salt, broth, pepper, and thyme. Scrape the bottom of the skillet to get the browned bits. Allow the mixture to boil.

Turn the heat down to low, then simmer for 10 minutes.

Add the cooked meatballs into the skillet with the sauce, then toss to coat. Sprinkle Gruyere on top.

Ingredients

  • FOR THE MEATBALLS:
  • 1/2 cup shredded Gruyere
  • 2 cloves garlic, minced
  • Freshly ground black pepper
  • 2 tablespoons freshly chopped parsley
  • 1 teaspoon kosher salt
  • 1 pound ground chicken
  • 2 tablespoons extra-virgin olive oil, for the baking sheet
  • 1/4 cup bread crumbs
  • 1 large Egg, beaten
  • FOR THE SAUCE:
  • 2 cups low-sodium beef broth
  • 2 large onions, thinly sliced
  • 4 tablespoons butter
  • 1 1/2 cups shredded Gruyere
  • 2 cloves garlic, minced
  • Freshly ground black pepper
  • 2 teaspoons freshly chopped thyme, plus more for garnish
  • Kosher salt

Instructions

Prepare the oven and preheat it to 218 degrees C or 425 degrees F.

Line with foil and apply cooking spray to a large baking sheet.

Add garlic, Gruyere, salt, ground chicken, parsley, pepper, and egg into a large bowl. Use your clean hands to mix everything until well incorporated. Form about 16 meatballs out of the mixture.

Lay the meatballs onto the prepared baking sheet and arrange them in a single layer.

Put the baking sheet in the preheated oven and bake the meatballs for about 25 minutes or until they turn golden brown.

Place a large skillet on the stove and turn the heat to medium. Add butter and allow it to melt. Add the onions, then stir and cook for 25 minutes or until they caramelize. Stir in the garlic and sauté just until aromatic.

Add salt, broth, pepper, and thyme. Scrape the bottom of the skillet to get the browned bits. Allow the mixture to boil.

Turn the heat down to low, then simmer for 10 minutes.

Add the cooked meatballs into the skillet with the sauce, then toss to coat. Sprinkle Gruyere on top.

Cover the skillet with the lid, then cook the cheese for 5 minutes or until melted. Remove from the heat and garnish with freshly chopped thyme.

Garlic Butter Baked Salmon Recipe

This Garlic Butter Baked Salmon is always my go-to recipe whenever I’m craving salmon. It is just insanely delicious! The addition of the broccoli made it a complete meal! A must-try indeed!

Ingredients:

FOR THE SALMON AND VEGETABLES

4 to 6 c broccoli florets

4 (6 oz. each) salmon fillets

FOR THE GARLIC BUTTER SAUCE

1/2 tsp dried oregano

1 lemon, halved and divided

6 tbsp unsalted butter, melted

1/2 tsp dried thyme

salt and fresh ground pepper, to taste

1/2 tsp dried rosemary

chopped fresh parsley, for garnish

1 tbsp light brown sugar

4 cloves garlic, minced

Directions:

Prepare the oven and preheat it to 200 degrees C or 400 degrees F.

Apply cooking spray to the inside of a sheet pan.

Place the broccoli onto the prepared pan and spread it evenly followed by the salmon fillets. Top each fillet with minced garlic and rub each to coat.

Add rosemary, melted butter, thyme, brown sugar, and oregano into a bowl. Whisk everything until well incorporated.

Add the mixture on top of the salmon and veggies, then spread it evenly.

Squeeze 1/2 of the lemon on top of the ingredients followed by a pinch of salt and pepper to season.

Put the baking sheet in the preheated oven and bake the salmon and broccoli for about 15 minutes or until done.

Remove the sheet from the oven and sprinkle freshly chopped parsley on top to garnish.

Serve right away with lemon wedges on the side. Enjoy!

Notes:

Place any leftovers in an airtight container, then put them in the fridge. They can last up to 3 to 4 days or 4 months in the freezer. Reheat for a few minutes before serving again.

Prepare the oven and preheat it to 190 degrees C or 375 degrees F.

Apply cooking spray to the inside of a 9×13-inch glass baking dish.

Place the flounder under running water and rinse them. Use paper towels to pat them dry.

Place the flounder fillets into the prepared baking dish and arrange them in a single layer.

In a mixing bowl, add garlic and olive oil. Stir until well blended. Add the mixture on top of the flounder fillets and spread it evenly. Top each flounder with thyme sprig and season with sea salt.

Place the baking dish in the preheated oven and bake the flounder fillets for about 12 to 15 minutes or until done. Remove from the oven.

German Pork Schnitzel

Tender and crispy both at the same time! This German Pork Schnitzel is something you need to try. What a dish! I recommend serving this with mashed potatoes and your favorite coleslaw. It will only take you 35 minutes to prepare and cook this. Everyone is going to love it, I’m sure of it. Enjoy!

Ingredients:

3/4 c all-purpose flour

1 tbsp milk or half and half

3/4 c plain breadcrumbs

1/4 teaspoon ground black pepper

1 large Egg

4 pork loin cutlets thin

1/2 teaspoon salt

Directions:

Lay the loin cutlets onto a chopping board, then cover each with plastic wrap. Gently pound each with a meat mallet to even sizes. Unwrap, then sprinkle salt and pepper to season.

In three mixing bowls, add flour, breadcrumbs, and milk & egg mixture separately.

Dredge each cutlet into the bowl with flour, egg mixture, and breadcrumbs. Remove any excess by shaking it. Repeat the process with the rest of the ingredients.

Place a skillet on the stove and turn the heat to medium. Add oil and allow it to become hot.

Add the coated pork cutlets into the hot skillet, then fry each side for 3 minutes or until they turn golden brown.

Remove the German Pork Schnitzels from the skillet and transfer them onto a clean plate lined with paper towels to drain excess oil.

Serve with steamed veggies on the sides and some mashed potatoes. Enjoy!

Notes:

It is important to tenderize the pork by pounding it. This will help cook them faster.

I highly recommend using pork loin for this recipe.

This recipe can serve up to 4 people. Make sure to double the recipe if you are serving more than that.
