GREEK CHICKEN BAKE

This Greek Chicken Bake is simply amazing! Ready in less than an hour, this spectacular dish is perfect for dinner with your loved ones. Try it now and prepare to fall in love. Enjoy!

Ingredients:

1/2 c sliced Greek pepperoncini

3/4 c crumbled Feta Cheese (use more or less to taste)

4 very large boneless, skinless chicken breasts

1/2 c chopped or sliced Kalamata olives (or use black olives if you prefer)

1/2 c cherry tomato halves

2 teaspoons Greek Seasoning

fresh-ground black pepper to taste

2 teaspoons olive oil

Directions:

Prepare the oven and preheat it to 190 degrees C or 375 degrees F.

Remove any fat that coats each chicken breast.

Sprinkle Greek seasoning over the chicken breasts, then toss to coat all sides.

Place a frying pan on the stove and turn the heat to medium-high. Add olive oil and allow it to become hot.

Put the chicken breasts into the hot skillet, then cook each side for about 2 minutes or until brown. Transfer them onto a cutting board and allow them to cool.

Cut the tomatoes into two, crumble the feta, drain the olives and slice them, and discard the seeds from the pepperoncini and cut it.

When the chicken breasts are cool enough to handle, slice each into 3 strips.

Apply cooking spray to the inside of an 8×13-inch casserole dish. Lay the chicken strips in it and arrange them in a single layer.

Scatter the pepperoncini, tomatoes, olives, and crumbled feta on top of the chicken strips. Sprinkle salt and pepper to taste.

Place the casserole dish in the preheated oven and bake for about 25 minutes or until done. Remove from the oven.

Serve right away. Enjoy!

Notes:

BEEF ENCHILADA CASSEROLE

Layer after layer of scrumptious flavors in this Beef Enchilada Casserole! This is a total family favorite! It will only take you about an hour to prepare and cook this. Also, you only need 6 ingredients for this! What are you waiting for? It is time to go to your kitchen and start prepping. Enjoy!

Ingredients:

2 c Enchilada sauce

6 8-inch Flour tortillas

2 lbs. of Ground Beef

12 oz. Cheddar cheese, shredded

½ c yellow onion, diced

¼ c Taco seasoning

Directions:

Prepare the oven and preheat it to 175 degrees C or 350 degrees F.

Place a skillet on the stove and turn the heat to medium. Add the ground beef, then cook for about 5 minutes or until crumbly and brown.

Add the onions, then sauté for about 3 minutes or until translucent.

Stir in the taco seasoning and 1/4 cup of water until well blended. Cook for about 5 minutes or until mostly dry.

Apply cooking spray to the inside of an 11×9-inch casserole dish. Add about 1/2 cup of the enchilada sauce to the bottom of the prepared casserole dish and spread it evenly.

Add 2 tortillas over the enchilada sauce.

Add 1/3 of the beef, 1/2 cup of enchilada sauce, and 1 cup of cheese on top. Repeat the process until everything is arranged in layers.

Cover the baking dish with foil. Place it in the preheated oven and bake for about half an hour.

Remove the foil cover, then bake for 10 more minutes or until the cheese turns golden brown. Remove from the oven.

Serve and enjoy!

TWIX COOKIE CUPS

These Twix Cookie Cups never fail to amaze me all the time! With simple ingredients and easy steps, this recipe is just perfect! My favorite is the caramel on top. It complements very well with the cookie!

Ingredients:

1 teaspoon baking powder

1 teaspoon vanilla extract

1/2 c butter

2 c milk chocolate chips

1 Egg white

20 caramels, unwrapped

1 tablespoon milk

1/2 c granulated sugar

1 1/2 c flour

Directions:

Prepare the oven and preheat it to 175 degrees C or 350 degrees F.

In a mixing bowl, add sugar and butter. Beat until well incorporated. Make sure that the sugar is completely dissolved. Stir in the vanilla and egg.

Add baking powder and flour, then whisk again until well combined.

Sprinkle flour onto a flat surface, then place the dough on it and roll it out to about 1/2-inch thick. Slice it into small circles and put them in a baking pan.

Place the pan in the preheated oven and bake the dough for about 6 to 8 minutes.

Remove the cookies from the oven and let them cool at room temperature while you prepare the rest of the ingredients.

Add milk and caramel into a heat-proof bowl. Place it in the microwave and heat it for about a minute to melt the caramel.

Remove from the microwave and give it a good stir.

Top each cookie with the caramel mixture and spread it evenly. Place them in the fridge to chill for at least 10 minutes.

Put the chocolate chips into a heat-proof bowl, then place it in the microwave. Heat for about a minute or until melted completely. Give it a good stir.

Top each cookie with the melted chocolate and spread it evenly. Let the chocolate set for a few minutes.

Serve and enjoy!

CHICKEN RAMEN

In just 30 minutes, this Chicken Ramen is ready for serving! This will be the best dish you will serve for dinner tonight! From the noodles to the luscious sauce, everything about this is just perfect!

Ingredients:

1 tbsp packed dark or light brown sugar (I like dark)

1 large chicken breast (1/2 lb.), or thigh, chopped into small bite-size pieces

1 and 1/2 tsp ginger paste (or ~1-inch fresh ginger)

1/2 of 1 large red bell pepper (~2/3 c), chopped into small pieces

3/4 c chopped broccoli, chopped into small pieces

1 tbsp ketchup

2 oz. chopped mushrooms (~3/4 c) chopped into small pieces

Fine sea salt and freshly cracked pepper

2 tbsp reduced-sodium soy sauce

2 tbsp Worcestershire sauce

3 packages (3 oz. EACH) of ramen noodles, seasoning packets discarded

2 tbsp vegetable oil deleted

1 clove garlic

Garnish with a sprinkle of toasted sesame seeds, 3-4 green onions, 1-2 tbsp chopped cilantro, and a few drizzles of sesame

oil

2-3 tsp Sriracha sauce

Directions:

Refer to the directions provided on the package of the Ramen noodles on how to cook them. Do not add the seasonings.

Instead, drizzle 1 tbsp of vegetable oil over the drained noodles, then toss to coat.

Place a large skillet on the stove and turn the heat to medium. Add 1 tbsp of oil and allow it to become hot.

Add ginger and garlic, then sauté for about a minute or until aromatic.

Add the mushrooms, red bell pepper, and broccoli. Stir-fry for about 3 minutes.

Add sriracha, soy sauce, ketchup, brown sugar, and Worcestershire sauce into a mixing bowl. Stir everything until well blended. Make sure to dissolve the sugar completely.

Slice the chicken into small cuts, then sprinkle salt and pepper over them to season.

Move aside the veggies from the skillet, then add the chicken to one side of it. Cook until all sides for 3 minutes.

Crispy Honey Garlic Chicken

This is the best way to cook chicken breasts! Usually, chicken breasts lack flavor and juiciness but this recipe changes those things! The sauce is perfectly seasoned! You will surely love it!

Ingredients:

¼ c vegetable oil

1 c flour

2 large Eggs, beaten + 1 tbsp water

1 tsp smoked paprika – regular is fine if you don’t have smoked

2 large boneless, skinless chicken breasts – cut in half lengthwise and pounded to an even thickness to make four cutlets

¼ tsp pepper

½ tsp salt

½ tsp garlic powder

1 tsp cayenne pepper

honey garlic sauce

2 tsp minced garlic

2 tbsp soy sauce

1 tbsp corn starch + 3 tbsp cold water

½ c honey

Directions:

Place a saucepan on the stove, then add the garlic, honey, and soy sauce. Stir to combine. Turn the heat to medium and allow the mixture to boil.

Add slurry (cornstarch and water mixture), then stir until well blended. Simmer the mixture for a few minutes until the texture becomes thick. Remove from the stove.

Add garlic powder, salt, pepper, flour, paprika, and cayenne pepper into a mixing bowl. Whisk everything until well incorporated.

In another bowl, add 1 tbsp of water and eggs. Whisk to combine.

Add each chicken into the bowl with the egg wash, then into the bowl with the flour mixture. Shake off any excess.

Place a large skillet on the stove and turn the heat to medium. Add oil and allow it to become hot.

Add the chicken to the hot oil, then cook per side for about 5 minutes or until they turn golden brown and crispy.

Transfer the fried chicken to the pan with the delicious sauce, then toss to coat.

Serve right away. Enjoy!

Notes:

Feel free to add about 3 tbsp of buffalo sauce if you wish.

  • 1 tsp cayenne pepper
  • honey garlic sauce
  • 2 tsp minced garlic
  • 2 tbsp soy sauce
  • 1 tbsp corn starch + 3 tbsp cold water
  • ½ c honey

Instructions

Place a saucepan on the stove, then add the garlic, honey, and soy sauce. Stir to combine. Turn the heat to medium and allow the mixture to boil.

Add slurry (cornstarch and water mixture), then stir until well blended. Simmer the mixture for a few minutes until the texture becomes thick. Remove from the stove.

Add garlic powder, salt, pepper, flour, paprika, and cayenne pepper into a mixing bowl. Whisk everything until well incorporated.

In another bowl, add 1 tbsp of water and eggs. Whisk to combine.

Add each chicken into the bowl with the egg wash, then into the bowl with the flour mixture. Shake off any excess.

Place a large skillet on the stove and turn the heat to medium. Add oil and allow it to become hot.

Add the chicken to the hot oil, then cook per side for about 5 minutes or until they turn golden brown and crispy.

Transfer the fried chicken to the pan with the delicious sauce, then toss to coat.

Serve right away. Enjoy!

Notes

Feel free to add about 3 tbsp of buffalo sauce if you wish.

Tomato and Bacon Pie

This pie is simply the best! The taste of the fresh tomatoes complements very well with the rest of the ingredients, especially the cheese and bacon. It is so difficult not to fall in love with this at first bite. A must-try recipe indeed. Enjoy!

Ingredients:

½ c cooked and crumbled bacon

½ c mayonnaise

¼ c basil, chopped

2-3 tomatoes, sliced

1 c shredded cheese, mozzarella or cheddar

freshly ground black pepper to taste

1 9-inch-deep dish frozen pie crust baked to package directions

½ c green onions, chopped

Directions:

Defrost the frozen pie crust if you are using it. Refer to the directions provided on the package of the pie crust on how to bake it. Remove from the oven and let it cool at room temperature for a few minutes.

Place the tomato slices at the bottom of the pie crust and arrange them in layers. Sprinkle salt and pepper on top to season.

Scatter the crumbled bacon, green onions, and basil on top of the tomato layer.

Add shredded cheese and mayonnaise into a mixing bowl. Stir everything until well blended.

Pour the mixture over the pie and spread it evenly

Place it in the oven preheated to 350 degrees F. Bake the pie for 30 to 35 minutes or until the top turns golden brown.

Remove from the oven and allow the pie to rest for a few minutes at room temperature.

Serve and enjoy!

Notes:

Make sure to cover the crust of the pie with foil if it gets too brown while baking it.

Place any leftovers in an airtight container, then put them in the fridge. Reheat for a few minutes before serving again.

One Pot Mexican Ground Beef and Rice

Rice, ground beef, cheese, and a lot more in one dish! This recipe is so worth all the time and effort! This is a complete meal that you will surely enjoy preparing. A family of 4 can enjoy this! If you are serving more than that, make sure to double the ingredients. Try this recipe now!

Ingredients: 

8.75 ounces of canned corn, not drained

4 ounces canned chopped green chilies, not drained

1-ounce taco seasoning

1-pound lean ground beef

1 c medium salsa

1 c yellow onion, diced

2 c instant rice

1 teaspoon dried chives

3 c shredded mozzarella and cheddar cheese

10.5 ounces of condensed chicken broth

1/2 c Heinz chili sauce

2 c water

Directions: 

Put a large pan on the stove and turn the heat to medium-high. Add butter and allow it to melt.

Add the ground beef, then cook for a few minutes until crumbly and brown.

Add the onions, then sauté for a few minutes until soft. Discard any accumulated fat, then add water and chicken broth. Stir everything until well blended.

Stir in the instant rice until fully covered with the broth mixture. Simmer for a few minutes until the rice is cooked through.

Add taco seasoning, chili sauce, salsa, green chilis, and canned corn. Stir everything until well incorporated. Simmer for a few more minutes. Remove the pan from the heat.

Stir in 2 cups of shredded cheese until well blended.

Scatter the rest of the shredded cheese and dried chives over the dish.

Let the dish rest for a few minutes at room temperature until the cheese has melted completely.

Serve warm. Enjoy!

Simple Salisbury Steak

This Simple Salisbury Steak is always a hit whenever I serve it for dinner! It is an easy recipe that you will surely enjoy preparing! It will only take you 18 minutes to make this dish. Just follow these steps, and you are good to go!

Ingredients:

Patties:

2 teaspoons Ketchup

1-pound Lean Ground Beef

1 teaspoon Worcestershire

1/3 c Bread Crumbs

1/2 teaspoon Garlic Powder

1/2 teaspoon Onion Powder

1 teaspoon Mustard

Gravy:

2 c hot Water

2 packets of Brown Gravy Mix

1 teaspoon Ketchup

1/2 teaspoon Worcestershire

Directions:

In a large mixing bowl, add all the ingredients listed on the patties. Use your clean hands to mix everything just until incorporated.

Put a large skillet on the stove and turn the heat to medium-high. Add 1 tbsp of olive oil and let it become hot.

Add the patties into the hot skillet, then cook each side for a few minutes until they turn brown.

In a mixing bowl, add water and the gravy mix. Stir to combine. Add the Worcestershire sauce and ketchup, then stir again until well incorporated.

Reduce the heat to low, then add the mixture on top of the patties. Toss to coat. Simmer until the texture of the sauce becomes thick. If it gets too thick, add a bit of water. Remove from the heat.

Serve right away over rice or mashed potatoes. Enjoy!

Notes:

Feel free to add veggies to this recipe. I highly suggest adding caramelized onions on top of the steaks. They taste incredible!

GARLIC BUTTER CHICKEN AND POTATOES SKILLET

Chicken, potatoes, and fresh herbs in one dish! It doesn’t get any better than this! Ready in just 30 minutes, you have got to give this recipe a try. Enjoy!

Ingredients:

1 tsp fresh thyme, chopped

Salt and fresh cracked pepper

1 1/2 pounds (650 grams) of baby yellow potatoes, quartered

1 tsp fresh oregano, chopped

1 tbsp olive oil

1 tsp fresh rosemary, chopped

5 garlic cloves, minced

3 tbsp butter, divided

Crushed red chili pepper flakes, optional

1 1/2 pounds (650 grams) of chicken breast, cut into strips

Marinade:

1 tbsp hot sauce (we used Sriracha)

Fresh cracked pepper

1 tbsp olive oil

1/4 c soy sauce (or coconut amino if you’re strictly paleo)

Directions:

Add the chicken strips, hot sauce, pepper, olive oil, and soy sauce into a large mixing bowl. Stir everything until well incorporated. Marinate the chicken while you cook the potatoes.

Place a large pot with water on the stove and turn the heat to high. Allow the water to boil.

Add the potatoes and a bit of salt, then cook for about 8 minutes or until tender. Drain.

Put a large skillet on the stove and turn the heat to medium-high. Add 1 tbsp of butter and 1 tbsp of olive oil, then allow them to become hot.

Add the potatoes into the hot skillet, then cook for 4 minutes or until they turn golden brown. Move them to a clean plate.

In the same skillet, add 2 tbsp of butter and allow it to melt.

Remove the chicken strips from the bowl and set aside the marinade.

Add the chicken into the skillet together with the chili pepper flakes and garlic. Stir and cook for a few minutes.

Add the marinade into the skillet, then stir to combine. Simmer for a few minutes. Stir in the herbs until well incorporated.

Put the potatoes back into the skillet, then toss to combine. Taste and add more seasonings if needed. Remove from the heat.

Serve right away. Enjoy!
