I Want to Marry You Cookies

by Rebecca May 30, 2020
written by Rebecca

Anyone can make a cookie. It’s one of the easiest and quickest pastry to make – a one-pan glory that involves creaming the butter and sugars. But this recipe is different, it does not involve some kind of creaming which makes these cookies one of a kind and insanely sinful. What needs to be done is melt the butter, once melted add in the sugar. I like it this way because it adds a toffee flavor to the cookies, it makes them smooth, and you’ll have that melt-in-your-mouth texture that you always crave for. And the aroma that comes from the sugars as they are dissolving along with the butter is heaven! This is a sure way to get someone to fall in love with you or gain serious addiction to these out of this world delicious cookies.

Ingredients

1 cup butter

1 1/4 cups dark brown sugar

1/2 cup granulated sugar

1 egg

1 egg yolk

1 teaspoon pure vanilla extract

2 cups flour

1 cup uncooked rolled oats

1/2 teaspoon baking soda

Salt

1/4 teaspoon ground cinnamon

1 cup white chocolate chips

1 cup of chocolate chips

How to make I Want to Marry You Cookies

Step 1: Prepare the oven. Preheat it to 3255 degrees F.

Step 2: Melt the butter in a medium saucepan over medium heat. Once melted remove from the heat.

Step 3: Stir in the dark brown sugar and granulated sugar. Mix until well blended and smooth. Refrigerate and chill for 10 minutes.

Step 4: When chilled remove from the fridge. Whisk in the egg, egg yolk, and vanilla.

Step 5: Add in the flour, oats, baking soda, half teaspoon salt, and cinnamon. Mix until incorporated.

Step 6: Then, stir in the white chocolate chips and chocolate chips.

Step 7: Scoop and roll the dough using your hands into 24 medium-size balls. Place them into a light-colored cookie sheet and chill for 30 minutes.

Step 8: Remove from the fridge and place the cookies inside the preheated oven and bake for 12 to 14 minutes.

KFC Cole Slaw

by Rebecca May 30, 2020
written by Rebecca

Salute to Colonel Sanders for giving us KFC! One of my favorite fast-food ever. I can’t count how many times I craved for KFC chicken and coleslaw and drove off to KFC late at night just to satisfy my crazy cravings.  Especially when I got pregnant, it was every day that I craved for Colonel Sander’s coleslaw. And because I had a very sensitive pregnancy I was forced to stay at home. Me being so pregnant and all, I checked for recipes online and found a coleslaw recipe that’s exactly the same as that from KFC. The taste is just like Colonel’s pride coleslaw and it’s pretty easy and quick to put together. I’ve never been so happy, cravings satisfied without the hassle of driving to KFC, or having a delivery boy knocking at my door at midnight.

When I first made this coleslaw everything I need is already in my pantry. There is no need for special ingredients, the recipe is very straight forward, plain simple, and all you need are some basic ingredients. Plus, this coleslaw takes only 5 minutes to make. The quickest and easiest side dish that you’ll enjoy all year round with your favorite chicken pulled pork, and more! And this tastes like the original Colonel Sanders KFC Coleslaw! Amazing!

INGREDIENTS

1/2 cup of mayonnaise (Hellman’s is best)

1/3 cup of sugar

1/4 cup of milk

1/4 cup of buttermilk

2 1/2 tablespoons of lemon juice

1 1/2 tablespoons of white vinegar

1/2 teaspoon of salt

1/8 teaspoon of pepper

8 cups of cabbage, finely chopped

1/4 cup of carrot, shredded

2 tablespoons of onion, optional

How to make KFC Cole Slaw

Step 1: In a large bowl, combine the mayonnaise, sugar, milk, buttermilk, lemon juice, vinegar, salt, and pepper. Mix until incorporated and smooth.

Step 2: Stir in the cabbage, carrots, and onion. Mix thoroughly.

Step 3: Cover before refrigerating. Chill for at least 2 hours or overnight.

Mama’s Shepard’s Pie

by Rebecca May 30, 2020
written by Rebecca

This is an awesome recipe to use leftovers. Toss in some leftover vegetables or meat in it so nothing goes to waste. I use leftover mashed potatoes, too, but if not available it’s perfectly okay to use instant mash potatoes. I hate throwing food so I find ways to use them. Well, my kids claimed that I am excellent at reinventing dishes using leftovers. LOL. And this is budget-friendly which is great, and super easy and quick to make. Shepard’s Pie is one of my family’s favorite, it’s so flavorful and is always a hit every time. Now, if you are looking for another hearty, delicious, savory, and a great quick family dinner this is worth a try. I promise this is a winner and it deserves a 5 star. Don’t be shy with cheese, sprinkle generously. Mexican blend shredded cheese goes very well with Shepard’s Pie but cheddar is also delicious. Bubbly melted cheese on top of the mashed potatoes is everything!

INGREDIENTS

1lb of ground beef

2 cups of mixed veggies

1 cup of chopped onion

1 jar of beef gravy

1 single package of instant mash potatoes

1/2 package of cream cheese and 1/2 cup of shredded cheese

How to make Mama’s Shepard’s Pie

Step 1: Prepare the oven. Preheat it to 350 degrees.

Step 2: In a skillet, saute the beef and onion and sprinkle with Gullah seasoning. Cook until browned and translucent. Drain excess fat.

Step 3:Stir in the mixed veggies and add in the beef gravy. Mix until combined, then, set aside.

Step 4: Follow the instruction to make instant potatoes. Add in the cream cheese and a half cup of shredded cheese. Blend until incorporated.

Step 5: Pour the ground beef mixture into a baking dish. Top with mashed potatoes and sprinkle the remaining shredded cheese.

Step 6: Place inside the preheated oven and bake for 20 minutes, uncovered. When done, remove from the oven. Serve immediately. Enjoy!

written by Rebecca

This is the most amazing cake I have ever had! You’ll never guess how smooth and creamy it is on the inside. And I can’t believe that I was able to make such a wonderful upside-down cake! It took me 3 tries before I was successful. Good thing for you, you won’t have to go through that. Here are the ingredients and specific instructions to guide you to perfection. Enjoy!

Ingredients

1 cup sweetened flaked coconut

1 cup pecans, finely chopped

3 1⁄2 cups powdered sugar

1 cup margarine, melted

8 ounces cream cheese, softened

1 (18 ounces) box German chocolate cake mix (with pudding)

1 1⁄4 cups water

1⁄3 cup oil

3 eggs

HOW TO MAKE GERMAN CHOCOLATE UPSIDE-DOWN CAKE

Step 1: Ready the oven and preheat to 375 degrees F.

Step 3: Add pecans and coconut and spread evenly on the bottom part of the pan then set it aside.

Step 4: Combine cake mix, water, eggs, and oil in a large mixing bowl. Refer to the packaging on how to prepare the cake mix. Whisk until well-blended.

Step 5: Gently transfer the batter into the prepared pan with the pecans and coconuts.

Step 6: Add the melted margarine, powdered sugar, and cream cheese into the large bowl. Beat for 30 seconds on low speed. When mixed, turn the speed to medium and beat for another 30 seconds until the texture turns smooth and creamy.

Step 8: Place in the oven and bake for 45-48 minutes or until the color of the cream cheese mixture turns golden brown. Another way to check if it’s done is to touch the cake and if it bounces back, it’s ready!

Step 9: Turn off the oven and remove the pan. Transfer into a wire rack to cool for about 20 minutes.

Step 10: Insert a knife on the side of the cake and move it in a circular motion the scoop the cake then transfer into a serving platter.

Hawaiian Baked Ham and Swiss Sandwiches

by Rebecca May 30, 2020
written by Rebecca

Sliders are great, they are easy to make, minis but terrible (good kind of terrible of course). They’re delicious with baked juicy ham, melted cheese, sweet Hawaiian rolls that have been drizzled with a buttery mixture. These are perfect for parties, surely a crowd-pleaser, pretty sure your guests will be asking for more (or for the recipe. LOL). The kids would want to have it for dinner, too.

Ingredients

1/2 cup (1 stick) butter, melted

1 tablespoon honey mustard

1 tablespoon minced dried onion

2 teaspoons Worcestershire sauce

15 King’s Hawaiian rolls

1 pound thinly sliced ham

About 10 slices Havarti cheese

How to make Hawaiian Baked Ham and Swiss Sandwiches

Step 1: Prepare the oven. Preheat it to 350 degrees F. Then, grease a 9 x 13-inch baking dish with a non-stick spray.

Step 2: Whisk the butter, mustard, onion, and Worcestershire sauce in a medium bowl. Mix until incorporated.

Step 3: Open the King’s Hawaiian rolls package and slice the entire piece of rolls in half. Pull the bottoms apart and place them into the greased dish.

Step 4: Fold the pieces of ham to fit the rolls. Place the folded ham on the bottom half of the roll. Then, layer it with cheese, more ham, and more cheese. And place the tops of the rolls onto the sliders. Drizzle the top of each rolls with a teaspoon of the butter mixture.

Step 5: Place inside the preheated oven and bake for about 20 minutes or until the sliders are warmed, the cheese melted, and the tops of each rolls are lightly browned. When done, remove from the oven and serve immediately. If you are not baking them yet, just cover the pan with a greased foil sheet and refrigerate. And when ready to bake, remove from the fridge and bake for 20 minutes, covered still with foil. Then, for an additional 10 to 15 minutes without the foil. Serve and enjoy!

LOADED BAKED POTATO SALAD

by Rebecca May 30, 2020
written by Rebecca

This loaded baked potato salad is a nice change for the classic potato salad. It’s packed with of course potatoes that have been cut into bite-sized pieces with sour cream, whip or mayo, cheddar cheese, bacon, and fresh chives. It’s a perfect side dish for anything, easy to make, and is great to bring along to any party.

My kids love the traditional potato salad. I always have to make extra because they are crazy about it. So, when I stumbled upon this recipe, my first thought was, will my kids love it? I was so worried that they will not appreciate it but they did! They fell in love with it instantly. My mom is so intrigue, she wants me to bring this to a barbeque at her place because my children can’t stop babbling about how delicious this salad is. I’ll give my mom the recipe, I’m sure she’ll love this, too.

INGREDIENTS

3 pounds red potatoes

3/4 cup of sour cream

3/4 cup of miracle whip or mayo

1 cup of shredded cheddar cheese

8 slices bacon cooked and crumbled

2-3 tablespoons of chopped fresh chives

Salt & pepper to taste

HOW TO MAKE LOADED BAKED POTATO SALAD

Step 1: In a large pot, put the potatoes and add enough water to cover the potatoes. Then, add about 1 teaspoon of salt. When boiling, lower the heat and continue cooking for about 15 to 20 minutes or until fork-tender. The cooking time differs from the size of the potatoes.

Step 2: Once the potatoes are cooked, drain, and set aside to cool.

Step 3: When cooled, peel the potatoes and cut them into bite-sized pieces.

Step 4: Place the bite-sized potatoes into a large bowl. Add the sour cream, mayo, cheddar cheese, and chives. Mix until incorporated. Then, season with salt and pepper to taste.

Step 5: Cover the bowl and place inside the fridge until ready to serve.

Cheesy Crab Rangoon Dip (Hot Crab Dip)

by Rebecca May 30, 2020
written by Rebecca

I love a good appetizer. It sets the mood for the following meal and stimulates my appetite. Whenever I am invited to a party the first thing I do is check the menu. And if I see Rangoon it’s guaranteed that it’ll end up on my plate! Rangoon is one of my favorite appetizers, crispy on the outside with a creamy cheesy crab filling. Delicious! And this Cheesy Crab Rangoon Dip has the same gratifying flavors that have been put into an entirely different form – a scoopable, and loveable dip. Dips with cream cheese is a total game-changer. For a much softer and fluffier dip, soften the cream cheese with a hand mixer to make it light and fluffy. Sprinkle with crunch wonton strips get that classic wonton flavor and serve with tortilla dippers.

Ingredients

8 oz cream cheese

1/2 cup of mayonnaise

1/4 cup of sour cream

1 tablespoon of lemon juice

1 teaspoon of Worcestershire sauce

1 cup of shredded mozzarella cheese divided

2 tablespoons of fresh chives

1 clove garlic

1/2 teaspoon of pepper

For the Garnish

1 tablespoon of fresh chives optional

Wonton Strips crushed (optional)
