Cheesy Ham and Potato Casserole

Casseroles are the ideal winter meal. They warm you up twice when you bake them, they heat the kitchen, and when you eat them, they heat your insides. This Ham and Potato Casserole is a perfect and simple meal. It allows people to enjoy this dish, Cheesy Ham and Potato Casserole while having a great time with their family and friends. It’s a perfect meal and not expensive to make. The best thing is that it’s versatile, replacing cheddar with swiss, replacing the ham with chicken, all of which will work into this recipe.

These are also a no-fuss, one-dish meal, which is simple to prepare, simple to serve, and easy to clean. And the leftovers produce a good warm lunch on a cold day when there’s a lot. So I thought with the cold weather setting in, we could all use a warm, cozy casserole recipe. We all need something, moist, simple, and delicious at this time of year, which uses the leftovers, trusts me, it is this Cheesy Ham and Potato Casserole. One of the best things about this is that while you’ve got to do some cutting and some frying from the bacon, there’s not much else to do. It’s good to let your children help to grate your cheese or cut your cream cheese, too, and you know that we are such big fans.

Ingredients:

24 oz Frozen Shredded Hash Brown Potatoes

2 tbsp Frozen Minced Onions

2 cups Sour Cream

(1) can Cream of Chicken Soup

1/2 cup butter (melted)

1 tsp salt

2 1/2 c Shredded Cheddar Cheese

3 cups Ham (cooked and diced)

Directions:

Preheat oven at about 350 degrees F.

Place frozen hash browns and minced onions in a large mixing bowl and mix.

Stir in sour cream, chicken soup milk, melted butter, flour, bacon, and shredded cheese for 2 cups.

Place the mixed ingredients in a 9X13 casserole dish and top with 1/2 cup of shredded cheese leftover.

Bake 40–45 minutes.

Cabbage, potatoes, and smoked sausage are a great match and never more so than in this Steamed Cabbage with Red Potatoes and Sausage Skillet together. I made endless dishes combining these two ingredients, but I knew it needed to happen soon when I saw this simple recipe.

It highlights all the delicious ingredients about these three, without adding much more to the dish. Simple, most tasty form, it is steamed cabbage with red potatoes and smoked sausage. As a reward, it’s easy to throw this skillet meal together without much notice making it perfect for a busy weekend dinner. These three ingredients complement each other so beautifully that it doesn’t matter what else is there. When these three ingredients are cook together, the result is a meal that your family and friends will approve and request now and then. I like it so much that I have lost count of all the recipes I’ve made that contain some cabbage, potatoes, and sausage combinations.

Cabbage, Red Potato and Smoked Sausage Recipe

Ingredients:

2 tbsp butter

(1) big onion, chopped

1/2 cup water

(1) large head cabbage, cut into wedges

(5) red potatoes, cut into cubes

1 lb smoked sausage, sliced

1 tsp salt

1/2 tsp pepper

Directions:

Put the butter and melt it in a Dutch oven and add and saute onions until soft.

Peel some or all potatoes, then cut in half or quarters. Pour 1⁄2 of water and add sausage slices and a cube of potato.

Slice the cabbages into thick or thin pieces and leave out the cabbage’s hard white part, then place in the pot.

Split and put onions in the put. Season with salt and pepper. Then steam for 30 minutes, or tenderize until the vegetable.

Cook on medium heat, then mix and shrink to medium/low. Cook for 30 minutes until carrots and potatoes are tender. Keep the lid on, remove the cover only when stirring. Stir occasionally, if necessary, add water to keep it from burning.

CHEESECAKE CRESCENT ROLLS

What a wonderful day! Despite this lockdown, I still have a lot of activities. Not like the ones I did before but I spend a lot of time in the kitchen now. The one thing I had no time to spend before. I cooked and baked a couple of recipes in 2 months. This recipe is just one of those that I am proud of. This is Cheesecake Crescent Rolls. Some of you may think, what is so special about this recipe? Well, as simple as it is, it made me happy today. I remember my Nana. She used to make this all the time. It’s a good thing that she gave me the recipe because it’s just too precious and delicious! This is the best Cheesecake you will ever eat I assure you! Give it a try. See you in my next recipe. INGREDIENTS

2 cans of Pillsbury Crescent rolls

2 (8oz each) package cream cheese, softened

1 1/2 tsp vanilla

1/4 cup butter, melted

cinnamon

sugar

INSTRUCTIONS

Step 1: In a 9×13-inch baking dish, arrange 1 can of the crescent rolls on the bottom part. Unroll.

Step 2: In a medium bowl, add vanilla, 1 cup of sugar, and soft cream cheese. Whisk until well-mixed.

Step 3: Pour the cream cheese mixture over the crescent roll layer on the baking dish.

Step 4: Add the remaining 1 can of crescent rolls over the cream cheese mixture.

Step 5: In a skillet, melt the butter then pour over the crescent rolls layer.

Step 6: Add a generous amount of sugar and cinnamon over the top.

Step 7: Place in the oven and bake at 350 degrees for 20-30 minutes. Once the color turns light brown and the texture is somehow bubbly, you are done!

Step 8: I usually pour a small amount of honey. It gives a nice flavor to it. Transfer into a wire rack and let it cool for a bit before slicing. Serve and enjoy!

OATMEAL PEANUT BUTTER COOKIES

Well, today I found out that there is a thing called Chocolate Festival in the Caribbean. I mean, what’s a better way to indulge your sweet tooth but to splurge on chocolates – the most heavenly delicacy out there. It got me thinking though, what if there is also a Peanut Butter festival? LMAO. But hey I’m a peanut butter lover so please don’t judge me. This idea brought me to making oatmeal peanut butter cookies. Which turned out so delish! So, I searched for a recipe online and I found this. I thought, okay so let’s try it and OMG it’s heaven! Imagine a thick cookie exploding with peanut butter, chewy oats, and of course the undying chocolate chips. It’s like a mouthful experience that one cannot forget. Plus it’s pretty easy to make, the instruction is easy to understand, yet the result is unapologetically scrumptious, fattening, but all worth it. Having said that, I remembered I baked like 2 trays yesterday and planning on keeping one tray for myself. LOL. The other tray I’ll bring in the office because we are having a peanut butter festival (my dream came true! yey!). And they requested if I can bring some because they (just like me) love these oatmeal peanut butter cookies.

SOUTHERN FRIED CORNBREAD

Cornbread is merely a southern staple. There are not many meals that a golden brown skillet of it does not complement perfectly. That said, our variations do exist. And, one of them is Southern Fried Cornbread. We Southerners do several ways of “frying” the cornbread. My mom also served what she called “Fried Cornbread,” a delicious cornbread made with cornmeal and buttermilk that you just fried. It was a constant alongside homemade vegetable soup, and also often appeared alongside chili. Piling some greens or beans right on top of that, too, is perfect.

A new way to cook your cornbread that results in a lighter bread now 100 different ways of doing this are available. There are some recipes that you must prepare and form a thick dough before you fry it. I think it’s easier, neater, and I like the crispy external method with a pourable batter. Fried cornbread, also known as cornmeal hoecakes and corn cakes, and occasionally Johnnycakes, is a kind of fried cornmeal flatbread-as if you were taking cornbread batter and frying it like a pancake. The inside is puffing up like cornbread, while the outside is getting cool and crispy in the oil to fry. It’s the ideal companion to a mess of greens, for breakfast or as a sweet treat when drizzled with a bit of syrup. If you have picky little eaters like me, then this is a great family lunch or dinner choice.

Potatoes and Kielbasa Recipe

INGREDIENTS

1 tablespoon oil

1 – 14 oz kielbasa, sliced and cut into

1 medium sweet onion, sliced and cut into

6 medium potatoes, peeled, washed and sliced (I used my mandolin to keep thinness consistent – about 1/4 inch)

2 cup cheddar or favorite shredded cheese

TO MAKE THE WHITE SAUCE

3 1/2 tablespoon butter

4 1/2 tablespoon flour

1 1/2 cup chicken broth

1 c heavy cream

1/2 cup milk

1/4 teaspoon dried thyme

1/2 – 3/4 teaspoon kosher salt

1/2 teaspoon pepper

HOW TO MAKE CREAMY SCALLOPED POTATOES AND KIELBASA

Step 1: Add oil in a medium skillet over medium-high heat. When the oil is hot, add in the kielbasa and onions. Occasionally stir. Caramelize the sausage and soften the onion. Set aside.

Step 2: Peel the potatoes, wash, slice, then keep them in cold water. Or you can partially cook them to cut down the baking time. When using a harder potato such as Russets, boil them for about 10 to 15 minutes to soften a bit.

Step 3: Meanwhile, melt the butter in a medium saucepan over medium heat. Add in the flour and whisk for about 1.5 minutes until thick. Continue to cook for at least a minute.

Step 4: Gradually add the broth while whisking continuously to make sure there are no lumps. Then, add in the cream, milk, and seasonings. Whisk frequently until you get a thick consistency. Taste the white sauce to adjust.

Step 5: Scoop enough sauce to cover the bottom of a 4-quart casserole. Layer over half of the potatoes, and half of kielbasa and onion mixture. Top with cheese.

Step 6: Repeat the layer; sauce, potatoes, kielbasa, and cheese (you might need to push the potatoes into the white sauce).

Step 7: Place the casserole in the oven, covered, and cook for 45 minutes in 350 degrees. Remove the foil and bake for another 40 minutes or until the potatoes are fork-tender.

Step 8: Serve immediately alongside your favorite veggies or a slice of crusty bread. Enjoy!

ORANGE DREAMSICLE SALAD

This fluff has a couple of steps, but it’s worth taking the time. You just need a few simple ingredients and the stuff on hand.  This orange jello is a delicious side dish and this season is perfect for all picnics! We would like to add mini marshmallows to our fluff, but you can leave them alone if you wish.

This fluffy orange creamsicle is ideal for parties or gatherings. This orange dream salad is full of flavor and will have everyone asking for the recipe, filling with mandarin oranges and marshmallows. They are technically known as a ‘salad’ but as sweet as a dessert they can double. In the summer I create a ton of different ones.

Ingredient:

1 box orange Jell-O

1 box instant vanilla pudding

1 cup boiling water

1/2 cup cold water

1 Cool Whip 8 oz.

1 can mandarin oranges 14 oz. , drained

1 cup mini marshmallows

Directions:

Combine orange Jell-O with cooking water in a large bowl.

Whisk up to dissolve the Jell-O.

Add cold water and cool in the refrigerator for 15 minutes.

Slowly whisk in the vanilla pudding for 15-20 minutes to smooth and chill or to some extent thicken.

Fold Cool whip, marshmallow, and mandarin oranges.

Tip:

Certainly, you could make your fresh cream whipped. Home-made whipped cream isn’t the only problem that stays long. It collapses and liquidates it quite quickly. Cool whip keeps you better for these types of salads, but don’t miss it! Change the fruit as you like, too.

I like this orange fluff sitting at least an hour before serving. The day before a meeting, you can most likely make this recipe. I brought this fluff to a playdate in the morning and everyone liked the recipe!

You can add a small orange mandarin and mini marshmallow to each serving in ramekins to make a perfect brunch setting for Easter or Mothers Day.

Certainly, you could make your fresh cream whipped. Home-made whipped cream isn't the only problem that stays long. It collapses and liquidates it quite quickly. Cool whip keeps you better for these types of salads, but don't miss it! Change the fruit as you like, too.

I like this orange fluff sitting at least an hour before serving. The day before a meeting, you can most likely make this recipe. I brought this fluff to a playdate in the morning and everyone liked the recipe!

You can add a small orange mandarin and mini marshmallow to each serving in ramekins to make a perfect brunch setting for Easter or Mothers Day.

Crescent Roll Taco Bake

Mexican casseroles are among our favorite meals for the week. This recipe uses crescent rolls and cheese of your choice. Great made and tasted super simple. I loved the whole ooey-gooey cheese, especially. For a little extra kick, we toped our taco bake with some sour cream, salsa, and jalapeños. The only change I could make next time is to add some black beans and mix the Velveeta into the meat mixture.

This recipe came from a can of higher rolls, which had been hiding for some time. I went to seek inspiration online, and I received some pretty great inspiration right away. This Crescent Roll Taco Bake is an inspiration. A crescent crustacean followed by taco spiced beef, chips, sour cream, and cheese crumbled. Stick the whole thing with salad, tomatoes, and avocados, and you have a good, delicious taco version. I’ve seen many variants of this recipe, and I wanted to go my way somewhat, to combine the two. You will gladly be able to serve the whole family, and we feel there are no complaints about it.

Crescent Roll Taco Recipe

Ingredients:

(2) crescent roll tubes

1 lb ground beef or you can use ground turkey

(1) a packet of taco seasoning

1 1/2 cups grated cheddar cheese

Shredded lettuce

(1 or 2) diced tomatoes

1/2 small can sliced olives

Sour cream (optional)

sliced avocado (optional)

Directions:

Lay 2 tubes of crescent pastry with thick layers inside.

Use any of the leftover crescent rolls to thicken the middle a little.

Brown beef and add seasoning to the taco.

Lay beef in a circle within crescent rolls laid out.

Cover with cheese.

Pull and tuck crescent rolls in under meat and cheese.

In the center, add cheese, lettuce, tomato, black olives, sour cream, or whatever you want for the tacos.

Follow the cooking time on a pack of crescent rolls, once you finish then your ready to go.

This is an excellent recipe from Pillsbury. This was amazingly easy and so good. We love sour cream, so we had that with it. I would just caution to watch the baking time. Cresent rolls generally don’t need that long to back. My crust was golden brown after 17 minutes, so keep an eye on it after it’s been in the oven for 15 minutes and use your best judgment.

This was a hit with my wife and 2-year-old son. I also cut up some tortilla wraps and fried them to make homemade chips, and those were a hit as well.

To Make this Recipe You’ll Need the following ingredients:

Add cheese to the top

Pullover crescent rolls and tuck in under meat and cheese.

Add cheese, lettuce, tomato, black olives, sour cream or whatever you desire for your tacos, in the middle.

Follow cook time on the pack of crescent rolls, and once it’s done, you’re good to go!

Grandma’s Apple Dumplings

When my grandmother, who had stayed with us, made her homemade apple dumplings in the fall, it was also a special treat. I will never forget that I saw her work in the kitchen and put all that love in her delightful treat. And my sister, before we sat down to eat her finished product, would be driven by the smell of baking warm apples. I think the warm vanilla sauce was what made them particularly delicious. We might have put ice cream on top now, which would have been pretty good for me, but nothing beat the special sauce of Grandma. Just that rich vanilla taste in a creamy sauce just put those apple dumplings on top.

I assume you believe that it is hard to make such a dish, but you’re wrong, it’s easy to do. You only need simple ingredients to create this dish. It may not be the same with my Grandma’s apple dumplings, but it certainly will be on your table more often with these scrupulous dumplings.

Ingredients:

(2) Granny Smith apples, peeled, cored and quartered

1 (8 ounces) can refrigerated crescent rolls

1/8 tsp of ground cinnamon

1/2 cup butter

3/4 cup white sugar

1 cup of orange juice

1 tsp vanilla extract

Directions:

Preheat oven at about 175 degrees C (350 degrees F). Wrap each piece of apple in a crescent roll. In an 8×8 baking dish, put the seam side down and sprinkle with the cinnamon.

Add and combine butter, sugar, and orange juice in a medium saucepan; bring to boil. Remove from oil, and add vanilla to stir. Pour onto rolls.

Bake for 30 minutes, or until golden pastry, and tender apples. For serving, spoon sauce over rolls.

Tip:

The best apple when making apple dumplings is a tart sort, like a Granny Smith, which stands up to baking. Granny Smith apples are not going to get mushy in the baking process but are going to bake up well under the flaky pastry dough layers. You can use Golden Delicious and Idared apples to create your apple dumplings.
