Oven Roasted Smoked Sausage and Potatoes

An easy and simple meal that is also economical . . . oh, and pretty delicious too!!

Oven Roasted Smoked Sausage and Potatoes

Ingredients:

1 package of smoked sausage

(Peel if necessary, and slice into rounds)

1 large onion, peeled and chopped

5 large potatoes, peeled and chopped into 1/2 inch cubes

olive oil

fine sea salt

freshly ground black pepper

sweet paprika

dried thyme

a handful of grated strong cheddar cheese

Directions:

Preheat the oven to 200*C/400*F/ gas mark 6. Line a large baking tray (with sides) with several sheets of foil, and drizzle with a bit of oil. Spread the oil out over the pan. Set aside.

Put the sausage rounds, onions, and potatoes into a large bowl. Drizzle with a couple of TBS of olive oil and season to taste with salt, pepper, paprika, and dried thyme. Toss together with your hands until everything is evenly distributed. Pour this out onto the baking tray, and spread it out as much as you can.

Place into the heated oven and roast for 45 minutes to an hour, stirring every 15 minutes or so, until the potatoes are golden brown and tender. Turn off the oven. Scatter the cheese over top of the cooked meat and potatoes, Pop back into the oven a few minutes to melt the cheese. Serve immediately.

NOTE:  I would not use any more than 1/2 tsp of the dried thyme, unless you really, really like the flavor of thyme.

A 5-ingredient recipe for an amazing dessert. One slice is not enough, you’ll be begging for more! My family’s most requested dessert. Oh, how we love apple pie and cinnamon roll, and with this recipe, we can’t ask for more. Our 2 favourites in one! It is so good and super easy to make! I love making this on regular days and when there’s a special occasion. You can never go wrong with it; such a simple dessert, the aroma of cinnamon is already appetizing, just wait until you taste it!

I always serve mine with coffee. I sit in the balcony by the window with a great book and a piece of this delicious Cinnamon Roll Apple Pie. It’s my escape. So, have your self a piece, or enjoy it with friends or family.

Ingredients

5 granny smith apples, sliced

2 cans of a cinnamon roll

½ cup sugar(100 g)

1 teaspoon cinnamon

1 tablespoon cornstarch

How to make Cinnamon Roll Apple Pie

Step 1: Prepare the oven. Preheat to 350 degrees F or 180 degrees C. Spray a pie dish with a nonstick spray.

Step 2: Peel the apples. Cut into thin slices (or cubes, it depends on how you like your apple). Place in a bowl.

Step 3: Add the sugar, cinnamon, and cornstarch to apples and mix well.

Step 4: Cut the cinnamon roll in half. With flour, roll out until thin.

Step 5: To create a bottom crust, layer the bottom of the pie dish with the flattened cinnamon rolls.

Step 6: Add the apples. Create a closed crust but layering the rest of the rolls on top and with your fingers, pinch holes together.

Step 7: Cover pie pan with foil. Put in the preheated oven and bake for 35 minutes.

Step 8: Then remove the foil and bake for 10 minutes more, uncovered.

Step 9: Once done, remove the pie from the oven. Let it cool. Drizzle with icing.

Step 10: Cut a piece, serve, and enjoy!

Orange Creamsicle Poke Cake

I am always amazed by poke cakes. Before, I didn’t even know what it means! When I first made a poke cake I laugh at myself, I thought, “Hey! poke is poking the cake with a fork to make holes”. Now I get it.

Poke cakes are not just pretty, they’re delicious, too! Like this Orange Creamsicle Poke Cake that reminds me of summer and popsicles. It is very easy to make. I am sure you’ll love it!

What you need:

1 (15.25 oz.) box white cake mix

3 eggs

1/2 cup oil

1 cup of water

1 tsp. vanilla extract, optional

Filling:

1 (3 oz.) package orange jello

1 cup of boiling water

1/2 cup cold water

Frosting:

1 (8 oz.) package frozen whipped topping, thawed

1 (3.4 oz.) instant vanilla pudding mix

1 cup milk

1 (11 oz.) can of mandarin oranges, drained, garnish

HOW TO ORANGE CREAMSICLE POKE CAKE

Step 1: Prepare the oven. Preheat to 350 degrees F or according to the cake packaging directions.  With a non-stick spray, grease a 9 x 13-inch baking pan.

Step 2: In a large bowl, pour the cake mix, eggs, oil, water, and vanilla extract. Mix until smooth.

Step 3: Pour mixture into the greased baking pan. Put in the oven and bake according to the package instruction.

Step 4: Remove the baking pan from the oven and let it cool for 15 minutes. Once cooled, poke the cake all over with a fork.

Step 5: In a large bowl, whisk jello mix in boiling water, stir until fully dissolved. Then, stir in cold water.

Step 6: Pour jello over the top of the cake, watch as the holes absorb the jello. Then, cover the cake and refrigerate for at least two hours.

Step 7: In a separate large bowl, whisk the milk. Keep stirring until thickened. Fold in frozen whipped topping until fully incorporated.

Step 8: Slowly pour the mixture over the chilled cake. Spread evenly.

Step 9: Top cake with drained mandarin oranges. Slice and serve.

Easy Peach Cobbler

This is a great peach cobbler–so easy a child can make it! It is great right out of the oven served with vanilla ice cream.

Ingredients:

2 lb frozen peaches

1 box yellow cake mix

1 can(s) diet 7up or sprite

Directions:

1 Spread frozen peaches in Pam sprayed 13×9 pan.

2 Sprinkle dry cake mix over peaches.

3 Pour 7up over cake mix.

4 Cover with foil and bake for 20 minutes at 350 degrees.

5 Uncover and bake for 40 minutes.

Per Serving: 390 calories; 16.4 g fat; 58.8 g carbohydrates; 4 g protein; 44 mg cholesterol; 393 mg sodium.

This was a VERY easy, FAST and delicious recipe! I added 2 tsp vanilla and since I did not have self-rising flour, I used 1 cup flour plus 1 tsp baking powder. Also, I added 2 tsp cinnamon and 1/2 tsp nutmeg to the peaches and their juice. Baked it at 350 for 1 hour uncovered and it browned nicely. If you are looking for a crispy topping, this will not be the recipe for you, rather the cobbler reminded me of a warm and gooey pie inside! It was excellent with vanilla or cinnamon ice cream and/or whipped cream! So easy to prepare and of course- to eat! Thanks for the recipe – this will be a repeat recipe for our family. Thank you for sharing!

This is just like my granny’s .. I love it. I use the same ingredients just put them together like my grandmother does. She melts the butter into the bottom of her pan, pour peaches over the top and then mixes together the milk, flour & sugar. Then pours the milk mixtures right in the center of the peaches. By then end of baking the milk mixture rises to the top and makes an awesome topping.

I didn’t have self-rising flour, so I used (according to a “substitutions” website I found) 1 cup of flour (minus 2 tsp), 1/2 tsp salt and 1 1/2 tsp baking powder for every cup of self-rising flour. I doubled the recipe, and used 2-28 ounce cans of peaches (I like lots) but only the juice/syrup from one and cooked in a 9×13 pan until golden brown on top. LOVED IT!!!!!! Thanks so much! (served with whipped cream while still hot!)

Chicken and Stuffing Casserole is one of those recipes that return’s me to my mother’s kitchen table. The smell alone can take me back to my youth years at home. I love that now my own children love this dish and appreciate it during supper. I can’t say the same when they were younger, though!

The recipe doesn’t originate from my other. But, my sibling, Lois, who gave this recipe to me at my wedding party a few years back. The note that she wrote on the recipe told me she’s been making this for a very long time. So, enjoy it!

1 1/2 cups water

1/4 cup butter

1 (6 ounce) package quick-cooking stuffing mix (such as Stove Top(R)), or more to taste

1 tablespoon butter

1 onion, diced

3 stalks celery, diced, or more to taste

1 (10.75 ounce) can cream of chicken soup

1 (8 ounce) container sour cream

1/2 (10.5 ounce) can cream of mushroom soup

1 whole cooked rotisserie chicken – skinned, boned, and meat shredded

salt and ground black pepper to taste

Directions

Preheat the oven to 375 degrees F.

Spray a 9 x 13-inch baking dish with cooking spray.

Bring the water and 1/  4 cup of butter to a boil in a saucepan; stir in stuffing mix. Remove saucepan from heat, cover, and let sit until water is absorbed for about five minutes. Fluff the stuffing with a fork.

Heat one tablespoon of butter in a skillet over medium heat; cook and stir the celery and onion until softened for about 10 minutes.

Mix the cream of mushroom soup, chicken soup, and sour cream in a bowl.

Spread the shredded chicken into the bottom of the prepared baking dish. Layer the onion mixture over chicken and season with salt and pepper; top with the soup mixture and spread stuffing over the soup mixture layer.

Bake in the preheated oven until browned and bubbling for about an hour

Melt – In – Your – Mouth Shortbread

These are the shortbread cookies my mom has made for Christmas every year since I was a child. They literally melt in your mouth. You will LOVE them!

These shortbread cookies are crazy soft. When I say they melt in your mouth, I mean it. No chewing required. They’re the most tender shortbread cookies you will ever eat. I just passed one to my handsome man and his response was, “Damn, woman. I don’t know what just happened in my mouth, but I want more of it.”

This shortbread cookie recipe has only 4 ingredients, is made in one bowl, and is the best shortbread you will ever eat. Are you sold? You should be!

TIPS FOR MAKING THE SOFTEST SHORTBREAD COOKIES

Make sure the cookie dough is cold before you put it in the oven. If your house is quite warm, put the cookie dough in the fridge to chill it before you bake the cookies.

Don’t skimp on the 10 minutes it takes to beat the dough. My whole family has made this recipe more times than we can count and it works best if you set a timer and see it through the full 10 minutes.

Use salted butter. This has nothing to do with making the softest shortbread cookies, but it will make the tastiest ones.

I must admit that I don’t care for this recipe. However, I am the minority! Every person that eats these absolutely loves them. I make them all of the time for those 2 reasons too! (This way I don’t pig out on cookies.) 🙂 I place the dough for these in a pastry bag and pipe them out using the largest star tip, they turn out really pretty. I have dipped them in chocolate and added sprinkles and they look great. Yesterday I added the rind from an orange for a citrusy flavor, it was very subtle but well received. These cookies do honestly melt in your mouth, they are a cinch to make and are fairly inexpensive to prepare-what more could you ask for in a recipe?

Beat on low for one minute, then on high for 3 to 4 minutes. Drop cookies by spoonfuls 2 inches apart on an ungreased cookie sheet.

Bake for 12 to 15 minutes in the preheated oven.

Watch that the edges don’t brown too much. Cool on wire racks.

No-bake, Five-Minutes Hawaiian Pie is a tropical pie that really does just take 5 minutes to put together. This recipe is everything you’ve been looking for in a tropical, no-bake dessert; it’s easy, creamy, fruity, and SO delicious!

Serving: 6 | Total Time: 6 hours

To make this amazing and delicious Hawaiian Pie You’ll need the following ingredients:

1 (20-ounce) can chilled crushed pineapple in heavy syrup, undrained

1 to 2 tablespoons lemon juice, optional but recommended

1 (6-serving size) package instant vanilla pudding mix

1 (8-ounce) container sour cream

1 (9-inch) store-bought shortbread pie crust

1 to 2 cups prepared whipped cream or Cool Whip

1 (8-ounce) can pineapple slices, drained really well on paper towels and each slice cut into thirds

6 to 8 stemmed maraschino cherries, drained well on paper towels

Tangy and Sweet Coca-Cola Meatballs

I am a Coca-Cola fan and completely addicted to it since I was young. So, I decided to make these delicious meatballs with Coca-Cola, which should be on your next dinner list! 🙂 – My daughter has been home for a few months, and she’s a huge fan of meatballs. So, I decided to make this delicious recipe as shes back home.

Coca Cola Meatballs Recipe

Coca Cola Meatballs Recipe

Ingredients:

500g Lean Ground Beef   (just over 1 pound)

1/2 cup Seasoned Bread Crumbs

1 Egg

1 TB Water

1 Onion, chopped finely, divided

1/2 t salt, divided

1/2 t Freshly Ground Black Pepper, divided

2 t Garlic, crushed

1 cup Tomato Sauce    (thick ketch-up)

1 cup Coca-Cola

2 TB Worcestershire Sauce

1/2 Green Bell Pepper, chopped finely

DIRECTIONS

Preheat the oven to 180 deg C (350 deg F)

In a 20 x 30cm oven dish, lightly spray with cooking spray.

In a big mixing bowl, combine the curry, breadcrumbs, Egg, Water, 1 / 2 the sliced Onion, (50% the Green Bell Pepper, when using) half of the Salt and half of the Dark Pepper. Then mix well and shape into chunks and put in one layer on the oven dish.

In a small bowl mix together the rest of the Onion, Salt, and Pepper and include the Garlic, Tomato Sauce, Cocacola, Worcestershire Sauce, and also the Green Bell Pepper. Then pour on the meatballs.

Bake for 60 moments until sauce is tender and the meatballs are fully cooked.

No-Bake Woolworth Icebox Cheesecake

No-Bake Woolworth Icebox Cheesecake, to make this amazing recipe you’ll need the following ingredients:

Ingredients:

1 (3 oz.) package lemon jello

1 cup boiling water

3 cups graham cracker crumbs

1/2 cup (1 stick) butter, melted

1 (8 oz.) package cream cheese

1 cup granulated sugar

4 tablespoons lemon juice

1 (12 oz.) can evaporated milk, chilled

Directions:

In a medium bowl, dissolve jello in boiling water. Let cool 5-10 minutes, or until slightly thick.

While jello cools, mix 3/4 graham cracker crumbs with melted butter in a medium bowl, then press into the bottom of 9×13-inch pan and set aside. Reserve remaining crumbs for topping.

In a medium bowl, beat evaporated milk until whipped and fluffy. 2-4 minutes.

In a separate, large bowl, beat cream cheese, sugar and lemon juice together until smooth. Add in thickened jello, then fold in whipped evaporated milk.

Spread filling evenly over crust and top with reserved graham cracker crumbs.

Cover and chill at least 2 hours, or overnight. Slice, serve, and enjoy!

Ingredients :

4 c rice, prepared

1/2 lb boneless chicken breast, cooked and cut into bite-size pieces. or same amount of medium-size cooked shrimp.

1 c peas and carrots, frozen

1 white onion, chopped

2 clove garlic, minced

2 eggs

3 Tbsp sesame oil

1/4 c soy sauce

Directions :

Prepare rice to the package instructions for 4 cups cooked rice.

Heat the sesame oil in a large skillet on medium heat.

Add onion, garlic, peas, and carrots. Stir fry until tender.

Then Crack eggs into pan and scramble, mixing throughout vegetables.

And add rice, chicken or shrimp or both, and soy sauce to the pan. Stir to combine all ingredients and remove from heat. Enjoy!
