Butterscotch White Chocolate Oatmeal Cookies

These angels are singing me a lullaby! These perfectly soft cookies just melt in your mouth! They are so delicious, a certified crowd-pleaser, and my-go-to. This is not your ordinary butterscotch cookies, they are way better! Soft, easy to whip up, and their taste is exceptional! My kid loves these so much she can eat the whole thing! These are not only perfect with coffee or milk for an afternoon or after school snack but gorgeous and unbelievably good to give as gifts. A homemade present for your friends and colleagues. I am sure whoever you give these Butterscotch White Chocolate Oatmeal Cookies will be super inspired and thrilled! This is to die for, a must-try! Enjoy them immediately or the next day, doesn’t matter because they’ll taste great no matter what.

INGREDIENTS

1 cup brown sugar

3/4 cup white sugar

1 cup butter, softened to room temp.

2 eggs

1 tablespoon vanilla

1 3/4 cups flour

1 teaspoon salt

1 teaspoon baking soda

2 cups oats

1 1/2 cups butterscotch chips

1 1/2 cups white chocolate chips

How to make Butterscotch White Chocolate Oatmeal Cookies

Step 1: In a bowl, mix the brown and white sugar. Then, add in the butter. Cream the sugars and butter until light and fluffy.

Step 2: In the same bowl, add in the eggs and vanilla. Mix until well combined.

Step 3: Combine the flour, salt, and soda along with the rest of the ingredients in the bowl. Mix until incorporated.

Step 4: Stir in the oats and chips until incorporated.

Step 5: Scoop the mixture onto an ungreased cookie sheet.

Step 6: Place inside the oven and bake at 350 degrees for approximately 10 to 12 minutes.

Step 7: Once done, remove from the oven but do not remove the cookies yet from the sheet. Let them cool first for a few minutes before transferring the cookies to a cooling rack to cool completely. Enjoy!

At this generation, we always are looking for quick and easy. Well, there is a lot you can find on the net. Just like this Salted Caramel Pecan Cheesecake Dip which is my hero whenever I need a last-minute dessert recipe that is a sure hit! I cannot remember where I got this recipe from but man when I found it I hit the jackpot! It is very convenient, super easy, and very quick to make. It saves me a lot of time especially when I have unexpected guests coming over because this dip only takes 5 minutes to make! Easy peasy! This caramel marshmallow fluff cream cheese filling that is topped with pecans, caramel, and flaked salt is to die for! It is perfect with cookies or graham crackers because it is comparable to a cheesecake crust. And I love this with apples, too! This definitely pleases the crowd. INGREDIENTS

For the Dip

8 ounces Cream Cheese – softened

1 cup Marshmallow Creme

1/2 cup Powdered Sugar

2 tablespoons Dulche de Leche

For the Topping

1/2 Cup Chopped Pecans

Crustless Cranberry Pie

I have tasted a lot of pies in my life but I have never been more impressed by this particular recipe. This is the Crustless Cranberry Pie. My friend introduced me to this recipe and I could not be more thankful to her because I never would have tasted perfection! With a very minimal set of ingredients, who would have thought that it would make an awesome Pie? I just followed the steps she had provided and the results were amazing! The highlight of this recipe for me is the cranberries. It’s obvious, right? It’s in the title. But yeah, it gives a very satisfying taste to the Pie. Be very generous with the cranberries. I only listed 2 cups but feel free to add more! If you are a huge fan of cranberries like me, you are in for a treat! I really can’t say more but try it! I am 100 percent sure that you will love it. It won’t disappoint you and it is worth your time!

INGREDIENTS

1 cup all-purpose flour

1 cup white sugar

1/4 teaspoon salt

2 cups cranberries

1/2 cup chopped walnuts

1/2 cup butter, melted

2 eggs

1 teaspoon almond extract

How to make Crustless Cranberry Pie

Step 1: Ready the oven and preheat to 175 degrees C or 350 degrees F.

Step 2: Apply cooking spray in a 9-inch pie pan.

Step 3: In a small bowl, add sugar, flour, and salt. Whisk until well-mixed.

Step 4: Add the walnuts and cranberries. Toss until completely coated with the flour mixture.

Step 5: Add in the beaten eggs, almond extract, and butter. Stir until well-mixed.

Step 6: Transfer the batter into the greased pan. Spread the batter evenly.

Step 7: Place the pan inside the preheated oven and bake for 40 minutes or until the toothpick inserted in the middle comes out clean.

The smell of these cookies will remind you of Christmas morning! That perfect aroma you smell when you wake up. I know it’s only July but I feel like Christmas already! I hope this recipe brings a smile to your face today. Enjoy!

INGREDIENTS

1/4 cup butter

1/2 cup confectioners’ sugar

3 tablespoons light corn syrup

3/4 cup finely chopped pecans

2 cups all-purpose flour

1 teaspoon baking powder

1 cup brown sugar, packed

3/4 cup butter, softened

1 egg

1 teaspoon vanilla extract

How to make Christmas Pecan Pie Cookies

Step 1: Place a saucepan on the stove and turn the heat to medium. Add 1/4 cup of butter and allow it to melt.

Step 2: Add corn syrup and the confectioners’ sugar and stir until the sugar is completely dissolved.

Step 3: Bring the mixture to a boil then add the pecans and stir until well-mixed.

Step 4: Remove the saucepan from the stove and transfer the mixture in a medium bowl.

Step 5: Put the mixture inside the fridge and chill for 30 minutes.

Step 6: Ready the oven and preheat to 175 degrees C or 350 degrees F.

Step 7: In a small bowl, add the baking powder and flour.

Step 8: In a large bowl, add 3/4 cup of butter, brown sugar, vanilla extract, and egg. Beat at medium speed using an electric mixer until creamy and smooth.

Step 9: Add the flour mixture a little at a time and stir until blended.

Step 10: Scoop 1 tablespoon of dough and form it like a ball.

Step 11: Place the rolled dough in an ungreased cupcake pan and press using your thumb with 1/4-inch sides. Do this to the other doughs.

Step 12: Fill with 1 teaspoon of pecan filling each of the small crusts.

Step 13: Place inside the preheated oven and bake for 10 to 13 minutes or until the shells turn light brown.

Step 14: Allow the cookies to set inside the cupcake pans for 5 minutes.

Step 15: Let it sit on a wire rack to cool completely.

Step 16: Serve and enjoy!

SLOW COOKER POOR MAN’S STEW

Cook and do chores at the same time! I have tried a lot of stew recipes but this one hit me hard! I have seen this recipe on TV last week. Well, what got me was the look of this dish. It was so delicious to look at! I could taste it just by looking at the picture and besides, I am a very busy person so this is the perfect dish for me. I can cook and work at the same time. How awesome is that? I usually prepare this at around one in the afternoon so come dinner time, I only need to serve and eat. My kids love this as well so it’s a win-win! It’s a very convenient dish to cook. You can add your preferred additional ingredients. For example, try to garnish it with fried garlic and freshly chopped spring onions. It gives a nice twist to the flavor especially the fried garlic! The recipe is perfect as is but feel free to make it more perfect! Have an awesome day. Enjoy!

INGREDIENTS

1 lb. ground beef browned and drained

1.5 lbs potatoes, diced large

3 carrots, sliced

1 onion, diced

1 garlic clove, minced (I had this on hand already)

1 (6-oz.) can tomato paste

2 cups of water

1 teaspoon salt

¼ teaspoon pepper

1 teaspoon onion powder

1 teaspoon dried oregano

HOW TO MAKE SLOW COOKER POOR MAN’S STEW

Step 1: Ready a 5-quart slow cooker. Add the ground beef, carrots, potatoes, garlic, and onion.

Step 2: Add water, onion powder, oregano, tomato paste, salt, and pepper in a small bowl. Whisk until well-mixed.

Step 3: Transfer the mixture into the slow cooker and stir until blended.

Step 4: Cover the slow cooker and cook for 6 to 7 hours. Do not open for great results.

Step 5: Serve and enjoy!

Note: This dish is best to serve with a nice buttered sandwich bread!

Grandma’s Homemade Potato Soup

This heartwarming, comforting soup is the easiest and tastiest. A simple, chunky, old-fashioned potato soup just like our Grandma’s recipe.

INGREDIENTS

2 pounds of russet potatoes, peeled and cut into large chunks (about 1-1/2 inch)

1/2 cup of chopped sweet onion

1/2 cup chopped celery

3 tablespoons all-purpose flour

Kosher salt and freshly cracked black pepper, to taste

1/4 to 1/2 cup (1/2 to 1 stick) salted butter

Water to cover

1 (12 ounces) can evaporate milk

Shredded cheese, for garnish, optional

How to make Grandma’s Homemade Potato Soup

Step 1: In a bowl, toss the potatoes, onions, celery, flour, salt, and pepper. Let it rest for 10 minutes.

Step 2: In the meantime, melt the butter using a dutch oven or soup pot. Then, add in the potatoes, and stir to coat.

Step 3: Pour in enough water just enough to cover the potatoes. Bring to a boil.

Step 4: Stir in the milk and decrease to a simmer. Continue cooking while stirring occasionally for about 25 to 30 minutes or until the potatoes are soft.

Step 5: Taste to adjust. Sprinkle salt and pepper if necessary.

Step 6: Continue to cook on simmer until your desired consistency and thickness is reached.

Step 7: Garnish with shredded cheese before serving. Serve hot. Enjoy!

Cook’s Notes: If you prefer a less chunky texture, you can use an immersion blender or potato masher to puree the potatoes. And there are variations you can take advantage of as well, like garnishing the soup with crumbled bacon.

Or try:

Potato Soup with Cajun Sausage: A pound of Andouille sausage slice into 1-inch pieces and cook in hot oil until browned.

Cheesy Ham and Potato Soup: Just before serving, add in 2 cups of cubed smoked ham and stir in 1 1/2 cups of shredded cheddar cheese. Continue to cook for the remaining minutes until the cheese is melted.

Instant Pot/Electronic Pressure Cooker: Prepare the potatoes like above and set aside. Meanwhile, saute to melt the butter. Add in the potato mixture and toss to coat. Pour some water or chicken broth an inch more to cover the potatoes. Then, stir in half of the milk. Now, seal and cook the pot or pressure cooker and set on high. Cook for 10 minutes. Once done, let the pressure release normally. Open the pot or cooker and mash the potatoes if you’d like. And stir in the rest of the milk and the remaining chicken broth or water as needed to reach your desired consistency. Sprinkle some cheese if desired and garnish as usual.

  • 1/4 to 1/2 cup (1/2 to 1 stick) salted butter
  • Water to cover
  • 1 (12 ounces) can evaporate milk
  • Shredded cheese, for garnish, optional

Instructions

Step 1: In a bowl, toss the potatoes, onions, celery, flour, salt, and pepper. Let it rest for 10 minutes.

Step 2: In the meantime, melt the butter using a dutch oven or soup pot. Then, add in the potatoes, and stir to coat.

Step 3: Pour in enough water just enough to cover the potatoes. Bring to a boil.

Step 4: Stir in the milk and decrease to a simmer. Continue cooking while stirring occasionally for about 25 to 30 minutes or until the potatoes are soft.

Step 5: Taste to adjust. Sprinkle salt and pepper if necessary.

Step 6: Continue to cook on simmer until your desired consistency and thickness is reached.

Step 7: Garnish with shredded cheese before serving. Serve hot. Enjoy!

Cook’s Notes: If you prefer a less chunky texture, you can use an immersion blender or potato masher to puree the potatoes. And there are variations you can take advantage of as well, like garnishing the soup with crumbled bacon.

Or try:

Potato Soup with Cajun Sausage: A pound of Andouille sausage slice into 1-inch pieces and cook in hot oil until browned.

Cheesy Ham and Potato Soup: Just before serving, add in 2 cups of cubed smoked ham and stir in 1 1/2 cups of shredded cheddar cheese. Continue to cook for the remaining minutes until the cheese is melted.

Instant Pot/Electronic Pressure Cooker: Prepare the potatoes like above and set aside. Meanwhile, saute to melt the butter. Add in the potato mixture and toss to coat. Pour some water or chicken broth an inch more to cover the potatoes. Then, stir in half of the milk. Now, seal and cook the pot or pressure cooker and set on high. Cook for 10 minutes. Once done, let the pressure release normally. Open the pot or cooker and mash the potatoes if you'd like. And stir in the rest of the milk and the remaining chicken broth or water as needed to reach your desired consistency. Sprinkle some cheese if desired and garnish as usual.

Do you feel like drinking tea? Well, don’t drink it yet without this amazing Cream Puffs! Don’t worry, it is very easy to make. It will only take you less than an hour to make this incredibly delicious treat. With a very limited set of ingredients, you can bake the perfect dessert or snack. Like what I said, this is perfect with tea. Think about sitting on your front porch eating this while sipping your favorite tea! Perfect, right? Yeah, I know! Give this one a try and I assure you that you will feel the same way that I did. Oh, boy, you are in for a treat! I hope you all like it. Enjoy!

INGREDIENTS

1 stick butter (8 Tablespoons)

1 cup of water

1 teaspoon vanilla

4 eggs

1 cup flour

MOM’S FAMOUS FILLING:

1-pint heavy cream

1 package (3.4 OUNCES) instant vanilla pudding

⅓ cup milk

How to make Mom’s Famous Cream Puffs

Step 1: Place a saucepan on the stove and turn the heat to medium.

Step 2: Add in the water, butter, and vanilla. Bring to a boil.

Step 3: Add flour and stir it forms into a ball.

Step 4: Remove the saucepan from the heat and let it cool to room temperature.

Step 5: In a medium mixing bowl, add 1 egg at a time and whisk until smooth and creamy.

Step 6: Line with parchment paper the cookie sheets.

Step 7: Place the balls into the lined cookie sheets.

Step 8: Place inside the preheated oven and bake for 25 to 30 minutes at 400 degrees C.

Step 9: Remove from the oven and let it sit on a wire rack to cool.

Step 10: Cut it into 2 and spread the Mom’s filling.

Step 11: Sprinkle with powdered sugar.

Step 12: Serve and enjoy!

Traditional Pecan Pie in a Jar

I can’t believe how awesome this recipe is! It blew me away the first time I tasted it. It is so easy and simple to make. Just follow these steps that I have provided and you are in for a treat! I hope this brings a smile to your face today. Enjoy!

INGREDIENTS

2 cups pecan halves, broken into coarse pieces

1 cup white sugar

3/4 cup light corn syrup

3/4 cup dark corn syrup

4 eggs

1/4 cup butter, melted

1 1/2 teaspoons vanilla extract

1 pinch salt

8 half-pint canning jars with lids and rings

cooking spray

2 unbaked 9-inch pie crusts

How to make Traditional Pecan Pie in a Jar

Step 1: Ready the oven and preheat to 175 degrees C or 350 degrees F.

Step 2: Put the pecans in a baking sheet and spread evenly.

Step 3: Place the baking sheet inside the preheated oven and bake for 6 to 8 minutes or until it is lightly toasted.

Step 4: Remove the baking sheet from the oven and let it sit on a wire rack to cool to room temperature.

Step 5: Place a saucepan on the stove and turn the heat to medium. Add in the dark corn syrup, light corn syrup, and sugar. Bring to a boil for 2 minutes.

Step 6: Remove the saucepan from the heat and let it cool for 10 minutes.

Step 7: Add eggs in a large bowl and whisk until smooth and creamy.

Step 8: Gently transfer the syrup mixture into the bowl while whisking to refrain the eggs from solidifying.

Step 9: Add in the vanilla extract, butter, and salt. Whisk until the batter is completely mixed and smooth.

Step 10: Apply cooking spray into 8 small jars.

Step 11: Scoop the dough and press them into the prepared small jars. In each jar, there should be a layer of toasted pecan. (It tastes really good!)

Step 12: Scoop the batter and leave a 1/4-inch rim on top of each jar.

Step 13: Place inside the preheated oven and bake for 40 minutes or until the top part turns dark.

Step 14: Remove from the oven and let it sit on a wire rack to cool to room temperature.

Step 15: Serve and enjoy!

Gooey Butter Cookies

I have never been more impressed in my life. This simple recipe made my day last Friday. I was going through something difficult in my life and my best friend helped me get through it. These cookies enlightened me in some way. It helped me find new reasons to go on and move on. Okay, it may be a little dramatic but in some way, it is true! I know that once you get a bite of these amazing cookies, you would feel the same way. It is so good that I am waiting for it to bake as I am writing this blog. I just can’t get enough of these little treats. A big thanks to my best friend, Anna, for teaching me how to bake these Gooey Butter Cookies! If you are feeling down today or you just simply feel great, try baking these. It will bring you the joy I promise!

INGREDIENTS

1 box Duncan Hines butter recipe cake mix (can substitute yellow or French vanilla)

1 stick butter

1/4 teaspoon vanilla extract

1 pkg cream cheese @ room temp (8 oz. pkg)

1 egg

powdered sugar (for rolling dough into)

How to make Gooey Butter Cookies

Step 1:Ready the oven and preheat to 350 degrees.

Step 2: Put the 1 box of Duncan Hines, 1 stick butter, 1/4 teaspoon vanilla extract, 1 pack of cream cheese, 1 egg, and powdered sugar in an electric mixer. Mix until well blended.

Step 3: Place inside the fridge for 2 hours to chill the dough.

Step 4: Roll into balls by rolling the dough forming a walnut size.

Step 5: Roll the balls into the powdered sugar to give it a sweet taste to it.

Step 6: Put the balls into a cookie sheet.

Step 7: Place the cookie sheet in the oven and bake for 350 degrees for 12 to 12 minutes or until cooked through.

Step 8: Remove from the oven and let it sit on a wire rack.

Step 9: Sprinkle with powdered sugar.

Step 10: Serve and enjoy!
