Crock Pot Beef Stew

by Rebecca November 8, 2022
written by Rebecca

Prep Time: 30 mins | Cook Time: 8 hrs | Total Time: 8 hrs 30 mins | Yield: 6 Servings

This Crock Pot Beef Stew is very heartwarming! Serve this over rice for dinner, and you have yourself a meal to remember! For me, the sauce is the winner in this dish. A must-try!

Ingredients:

For the meat:

1-2 tsp salt or less, depending on what kind of stock you’re using

2 tbsp flour

1.5 lbs. beef stewing meat in chunks

black pepper to taste

2 tbsp oil

For the gravy:

2 c beef stock

2 tsp Italian seasoning

2 cloves of garlic, sliced

2 tbsp Worcestershire sauce

2 large yellow onions, cut into wedges

4 tbsp tomato paste

1 tbsp maple syrup

¼ c red wine OR use more stock

For the vegetables:

½ c frozen peas, no need to defrost

4 large carrots, peeled, ends trimmed, and cut into chunks

½ lb. brown mushrooms, cleaned and quartered

4 large celery sticks were trimmed and thickly sliced

3 large waxy potatoes, peeled and cut into chunks

Directions:

Place a large skillet on the stove and turn the heat to medium-high. Add oil and allow it to become hot.

Add the beef into the hot skillet, then sprinkle pepper, flour, and salt on top. Sear for a few minutes until brown. Move them into a 5-quart slow cooker.

Add oil to the same skillet and allow it to become hot. Add the garlic and onions, then sauté for a few minutes until aromatic and translucent.

Add the tomato paste and Italian seasoning, then stir and cook for about a minute to remove the raw taste of the paste.

Add the red wine, then scrape the bottom of the skillet to deglaze it. Stir everything until well incorporated. Let it simmer for a few minutes until the texture of the sauce becomes thick.

Add the stock, maple syrup, and Worcestershire sauce. Stir and let it boil. Transfer it into the slow cooker with the beef together with carrots, mushrooms, and potatoes.

Cover and seal the slow cooker, then cook everything for about 8 hours on a low setting or 4 hours on a high setting. Add the peas and cook for another 10 minutes.

Serve and enjoy!

Notes:

Adding flour makes the texture of the sauce thick.

Feel free to add slurry (cornstarch and water mixture) if you prefer.

Granny’s Classic Meatloaf

by Rebecca November 8, 2022
written by Rebecca

Prep Time: 20 mins | Cook Time: 1 hr 15 mins| Total Time: 1 hr 35 mins | Yield: 8 Servings

This Granny’s Classic Meatloaf never gets old! I’ve been making this for years now. My family and I are still in love with it to this day! Everything about this is perfect. From the meatloaf itself to the topping, you will surely love it!

Ingredients:

Meatloaf:

1 tsp thyme

1 c panko bread crumbs

2 cloves garlic (minced)

1 tsp kosher salt

1 large Egg

2 lbs. ground beef

1 c milk

1 medium-sized onion (diced)

1 tbsp butter

1 tbsp Worcestershire sauce

Topping:

1 tbsp brown sugar

1 tbsp spicy brown mustard

½ c ketchup

Directions:

Prepare the oven and preheat it to 175 degrees C or 350 degrees F.

Line parchment paper onto a baking sheet.

Place a pan on the stove and turn the heat to medium. Add butter and allow it to melt. Add the onions, then sauté for a few minutes until a bit caramelized.

Add the garlic, then sauté just until aromatic.

Remove the pan from the heat and let the sauteed veggies cool for a few minutes.

Add ground beef, salt, thyme, garlic, Worcestershire sauce, milk, bread crumbs, onion, and egg into a large bowl. Use your hands to mix everything until well incorporated. Transfer the mixture onto the prepared baking sheet and shape it into a meatloaf.

Create crisscross patterns over the meatloaf with a knife. Bake the meatloaf for about 40 minutes.

In a mixing bowl, add ketchup, mustard, and brown sugar. Stir to mix, then brush the meatloaf with it. Bake for another half an hour.

Serve warm and enjoy!

Notes:

Make sure not to overmix the meatloaf. Mix it just until it comes together.

I recommend the use of an instant-read thermometer to check the doneness of the meatloaf. It should read about 160 degrees C.
