Mexican Restaurant Style White Cheese (Queso) Dip

by Rebecca May 28, 2020
written by Rebecca

I love Mexican dishes, they’re so rich, so flavorful, most of the time spicy and oh so cheesy. They are so comforting, and one of the best things about them is the dip. This white sauce (queso) dip is similar to that of a Mexican restaurant-style dip that we all love. I used to buy the bottled queso dip but when I stumbled upon this great recipe and tasted how good this is I’ve never bought another bottled queso dip ever again. I mean, this is way too easy to prepare. I always have some in the fridge because this is great for anything. This has become my favorite dip. I used this as a dip for tortilla chips, this is a great cheese sauce too for nachos, burritos, quesadillas, and for many Mexican dishes (the list goes on). You can also adjust the heat on your liking just by adding your favorite chili pepper or crushed cayenne pepper. I like to turn the heat up sometimes so I add minced pickled jalapeno and it’s delicious still. This white cheese dip is best served hot, like out of the skillet hot, but if stored in the fridge, you can microwave it for 30 seconds increments until it becomes liquid before serving.

Ingredients

1 pound white American cheese, cubed

½ cup of milk, or as needed

1 tablespoon of butter or margarine

2 (4 ounces) cans of chopped green chilies

2 teaspoons of cumin

2 teaspoons of garlic powder

2 teaspoons of onion powder

cayenne pepper to taste

How to make Mexican Restaurant Style White Cheese (Queso) Dip

Step 1: In a medium saucepan, cook the milk and butter over low heat.

Step 2: Cook and stir frequently until the cheese has melted.

Step 3: Then, stir in the green chilies, cumin, garlic powder, onion powder, and cayenne pepper to taste.

Step 4: Add in more milk if the mixture is too thick. And heat through.

Step 5: Remove from the heat and serve immediately.

Mexican Restaurant Style White Cheese (Queso) Dip

by Rebecca March 24, 2020
written by Rebecca

This is an amazing, restaurant-style White Cheese (Queso) Dip. The garlic and onion powder makes it even tastier! I personally used a pound of Velveeta, which was awesome. My family loved it and thought it was better than going to a Mexican restaurant! I put this all over rice and burritos for a yummy meal. I will also be using this in my future family reunion, since my family loves Mexican restaurants and what else wouldn’t surprise them with this delicious Mexican-style cheese? Also, it’s very affordable to make and quite easy!

This recipe is very similar to white cheese served in other Mexican-style restaurants. The heat in the instructions can be adjusted by adding chili or cayenne pepper. If you have kids, you can keep it as is so they don’t burn their mouths! It can also be used for tortilla chips and other dishes you choose!

Servings: 8 | Prep 5 mins |  Cook 10 mins | Ready In 15 – 20 mins.

Ingredients:

1 pound white, deli-sliced American cheese

⅔ cup of milk or half-and-half

3-4 tablespoons of canned, chopped green chiles or jalepenos

1 teaspoon cumin

1 teaspoon chipotle powder (optional)

How to make it :

Directions:

Use a slow cooker and turn to the lowest settings. You don’t want to cook it too fast, otherwise, you can ruin the texture of the cheese. Let it cook very slowly and gradually. Dump all the ingredients in, heat and stir until it’s thickened. If you’re using a double boiler, heat the milk separately with chopped chiles and spices. Then, add in the American Cheese, gradually. About 1 – 2 slices are ideal and keep stirring until it’s completely melted and together.

If using a double boiler, heat the milk, chopped chiles and spices, then gradually add in the American cheese, 1-2 slices at a time, stirring until fully melted and absorbed together.

We seldom have leftovers whenever I serve this scrumptious queso chicken tacos. Everybody loves it! We enjoy this on tortillas with our favourite toppings. In the rare moments, we have leftovers, we freeze them and enjoy them the next day over rice, nachos, baked potatoes, or a salad. This versatile dish deserves the spotlight. If you’d like, you can easily turn this into a dip by simply more cheese dip to the chicken mixture. Pour it over nachos or enjoy warm with chips.

HOW TO MAKE SLOW COOKER QUESO CHICKEN TACOS

Step 1: In a 6-quart slow cooker, place the chicken and sprinkle with the taco seasoning. On top, place the tomatoes. Put the lid on and set to cook for 4 to 6 hours on low.

Step 2: When done, take the chicken from the slow cooker and shred using two forks. Place the shredded chicken back in the slow cooker along with the cheese dip. Stir well.

Step 3: When done, enjoy with tortillas or hard taco shells and preferred taco toppings.

Notes:

Feel free to use less or more cheese dip. Adjust according to taste.

You can freeze the leftover chicken.

For this recipe, I used the Gordo’s or Pancho’s White Queso dip. You can find them in the cheese section.
