2 tablespoons butter
2 tablespoons all-purpose flour
1 1/2 c. heavy whipping cream
8 ounces Pepper Jack cheese block
4 ounces sharp white cheddar cheese block
2 jalapenos
1/4 c. diced green onion
3 garlic cloves
1 large red bell pepper
Pinch cayenne adjust the hear to your preference

How to make Homemade White Queso Dip
Step 1: On a large grater, grate the cheese and set aside.
Step 2: Dice the jalapenos, discarding the seeds. If you prefer a spicier dip, you can use older jalapenos, or for less spice, opt for younger jalapenos.
Step 3: Mince the garlic and dice the bell peppers and green onions. Set aside.
Step 4: In a bottom-heavy saucepot, melt the butter over medium-low heat.
Step 5: Once the butter has melted, add the diced peppers and garlic to the pot. Saute for a few minutes until the peppers begin to soften.
Step 6: Over the top, sprinkle the flour and stir well to coat the peppers. Gradually pour in the heavy whipping cream, whisking continuously as you go.
Step 7: To the top, add the cheese a handful at a time, stirring slowly. Remain to stir using a whisk until the cheese has melted and smooth.
Step 8: Add in the green onions and stir. Season with pinches of salt and if using cayenne pepper. Remove from the heat and serve immediately with your favourite tortilla chips. Enjoy!
