This scrumptious Tomato Caper Crispy Baked Gnocchi is an amazing substitute for your usual spaghetti. Loaded with gnocchi, tomatoes, capers, and cheese, this savoury baked dish is sure to impress everyone!
Ingredients
1 package (about 1 lb) gnocchi
1 tbsp butter
Olive oil
1 small onion, diced
Salt and pepper
1 c. fresh grape tomatoes, whole
2 cloves garlic, minced
1 tablespoon whole capers, drained
1 tsp red pepper flakes
1/4 c. dry white wine
1 c. canned crushed tomatoes
1 tbsp fresh oregano, chopped
3/4 c. shredded mozzarella
1/4 c. grated Parmesan cheese
Parsley, for garnish

How to make Tomato Caper Crispy Baked Gnocchi
Step 1: Prepare the oven. Preheat it to 400 degrees.
Step 2: Following the package directions, boil the gnocchi. Drain when done and set aside.
Step 3: Melt the butter and heat the olive oil in a 9-inch cast-iron skillet. Add the gnocchi to the melted butter and cook for approximately 5 minutes until both sides are crispy. Remove from the pan and set aside.
Step 4: Coat the same skillet with olive oil. Add the onions and saute until translucent. Lightly season the onions with salt and pepper.
Step 5: To the onions in the skillet, add the grape tomatoes and saute until they burst. Add the garlic, capers, and red pepper flakes and continue to cook for 30 seconds more.
Step 6: Pour the white wine into the skillet. Deglaze the pan and cook until the liquid is reduced in half. Now, add the crushed tomatoes, oregano, and shredded mozzarella. Return the crispy gnocchi to the skillet and top with Parmesan.
Step 7: Transfer the oven-safe skillet to the preheated oven and bake for about 20 to 30 minutes until golden brown and bubbling. Remove from the oven when done and let the dish cool for at least 10 minutes.
Step 8: Before serving, garnish with basil and parsley. Enjoy!
