Insanely delicious Raspberry Oatmeal Crumble Bars! Make these amazing bars any time at home using only a few simple ingredients that you might already have in your pantry. Serve these slightly chewy Raspberry Oatmeal Crumble Bars that are bursting with raspberry jam either for breakfast or dessert.

My kids love these Raspberry Oatmeal Crumble Bars. They are incredible with buttery, oatmeal crust, and a sweet raspberry layer topped with tasty oatmeal crumble. Crazy good, you’ll find it hard to stop eating them!

I am obsessed with the over-the-top combination of the butter oatmeal crust/crumbles and the raspberry jam. I love how the crust is a little crispy as it goes so well with the soft and slightly jam and crumble topping. These Raspberry Oatmeal Crumble Bars are super addictive, you’ll probably be tempted to delay your diet!

INGREDIENTS

1/2 c. brown sugar, packed

3/4 c. (1 1/2 sticks) unsalted butter, softened

1 tsp vanilla extract

1/2 c. granulated sugar

1 1/2 c. all-purpose flour

1 (18 ounces) jar of raspberry jam

1/2 tsp baking powder

1 1/2 c. rolled oats, NOT quick cook or instant

1/2 tsp salt

How to make Raspberry Oatmeal Crumble Bars

Step 1: Prepare the oven. Preheat it to 350 degrees F. Using a nonstick spray, grease an 8-inch square baking dish, and set aside.

Step 2: Place the butter and sugars in a large mixing bowl. Mix well using an electric mixer until smooth. Then, stir in the vanilla extract, oats, flour, salt, and baking powder until well blended.

Step 3: Into the bottom of the prepared pan, firmly press 3/4 of the oat mixture. Over the oat mixture, evenly spread the jam and crumble the rest of the oat mixture on top.

Step 4: Place in the preheated oven and bake for about 30 to 40 minutes or until the top is lightly golden brown. Remove from the oven when done and allow the bars to cool fully. This takes about 2 hours.

Step 5: Slice and serve. Enjoy!
