TATER TOT BREAKFAST CASSEROLE

Start your day right with this Tater Tot Breakfast Casserole. It’s packed with our favourite breakfast must-haves from breakfast pork sausage, eggs, and cheddar cheese. I like how I can easily prep this. I can even make this in advance to save time. Then, just pop this in the oven, and voila! You have a filling, melty, and delicious breakfast or brunch ready in no time! This is also pretty versatile as you can substitute the meat with any cooked meat. You can also add fresh veggies if desired, such as red and green peppers. I am obsessed with bacon crunch, so I top this casserole with bacon.

INGREDIENTS

1 package frozen tater tots – approximately 24 ounces

8 eggs

1 1/2 c. whole milk or heavy cream

1 lb pork sausage – jimmy dean

2 c. cheddar cheese

1/4 teaspoon garlic powder

1 1/2 teaspoons salt

1 teaspoon black pepper

HOW TO MAKE TATER TOT BREAKFAST CASSEROLE

Step 1: Prepare the oven. Preheat it to 375 degrees. Using nonstick cooking spray, grease a 9 x 13-inch pan.

Step 2: In a skillet, cook the meat over medium heat until no longer pink, breaking the sausage apart into small pieces. When done, drain the excess grease and set the meat aside.

Step 3: Combine 8 eggs with 1 cup of half of the heavy cream and all spices until well mixed.

Step 4: In the bottom of the prepared dish, add the frozen tater tots until you have a full layer. Top with the precooked sausage, 2 cups of cheddar cheese, and pour over the whisked egg mixture.

Step 5: Tent the casserole with foil. Place in the preheated oven and bake for about 40 minutes. Uncover and continue to bake for an additional 15 to 20 minutes or until the centre egg is completely cooked.

Step 6: Remove from the oven when done and serve the casserole hot with sour cream, tomatoes, salsa, or crunchy bacon. Enjoy!
