INGREDIENTS
1 tbsp olive oil
1 lb ground beef
1 (1.25-oz.) package taco seasoning
1 (10-oz. can) Ro*Tel® Mild Diced Tomatoes & Green Chilies
1 tbsp tomato paste
8 oz. spaghetti
1/2 c. shredded cheddar cheese
1/2 c. shredded mozzarella cheese
1 Roma tomato, diced
2 tbsp chopped fresh cilantro leaves
How to make Taco Spaghetti To Die For
Step 1: In a large stockpot or Dutch oven, heat the olive oil over medium-high heat. Add the ground beef to the hot oil and cook for about 3 to 5 minutes until brown, breaking the beef into chunks as it cooks. Then, stir in the taco seasoning. Drain the excess grease when done.
Step 2: Add in the Ro*Tel®, tomato paste, spaghetti, and 3 cups water. Stir and bring to a boil. Cover with the lid and decrease the heat, then simmer for about 13 to 16 minutes until the pasta is cooked.
Step 3: Take away from the heat before adding the cheese on top. Cover again to let the cheese melt. This takes around 2 minutes.
Step 4: If desired, garnish with tomato and cilantro. Serve immediately. Enjoy!
