1/2 lb ground chuck
1/2 c. diced onion
1/2 tbsp minced garlic
1/2 tbsp chilli powder
1 tsp ground cumin
1/2 tsp paprika
1/2 to 1 tsp kosher salt
1/2 tsp freshly ground black pepper
1/2 (16-oz.) can of refried beans
2 (10”) flour tortillas
1/2 c. salsa
1 c. shredded Mexican Cheese Blend
1/2 c. freshly diced tomatoes
1/4 c. chopped green onions
1 to 2 tbsp finely diced jalapeno peppers
Chopped cilantro for garnish
Sour cream
Simple Guacamole
HOW TO MAKE TACO PIE
Step 1: Prepare the oven. Preheat it to 375 degrees F. And using cooking spray, grease a 9-inch pie plate. Set aside.
Step 2: On medium-high, heat a skillet and add in the ground chuck. With half tbsp chilli powder, a tsp ground cumin, half tsp paprika, half tsp kosher salt, and half tsp freshly ground black pepper, season the beef. Add in half cup diced onions and half tbsp freshly minced garlic. Cook the meat until brown and the fat is absorbed.
Step 3: To the pie plate, place one 10-inches tortilla, entirely covering the bottom of the plate up to the sides. Spread 8-ounces refried beans to cover the bottom. Over the beans, spoon the meat mixture and evenly spread. Top with the second tortilla, pressing it down gently around the sides.
Step 4: Place in the preheated oven and bake for bout 10 to 15 minutes until lightly brown.
Step 5: Take the pie plate from the oven. Spread on top the half cup of salsa, sprinkle with a cup of shredded cheese, and evenly spread the diced tomatoes. On top, sprinkle 1/4 cup of the chopped onions followed by 2 tbsp of the finely diced jalapeno peppers. Return to the oven and bake for 5 minutes more until the cheese has melted.
Step 6: When done, remove from the oven and let the Taco Pie cool. Before serving, garnish with freshly chopped cilantro. Enjoy with sour cream and Simple Guacamole.
NOTES:
Feel free to double the recipe. Simply double the ingredients are divide them among two pie plates. Completely cool the pie, then tightly cover, and freeze.
