I am obsessed with Mexican dishes and lasagna! So this Taco Lasagna is my perfect match! I can easily enjoy my favourite classic taco flavours in the shape of delicious lasagna with this simple recipe made with a few pantry-friendly ingredients.
Even as I child I enjoy Taco Tuesday. My aunt makes the best tacos, and she gladly shared her most popular recipe – Taco Lasagna. From then, this has become one of my top favourite picks and my family’s favourite weeknight meal. This recipe is everything, but complicated. I can even make this with my eyes closed! 1 Egg
1 lb. lean ground beef
5 c. shredded Mexican style cheese
15 oz. ricotta cheese
24 oz. mild Pace salsa
sour cream
diced tomatoes
1 package of lasagna noodles
green onions
2 packages taco seasoning
How to make Taco Lasagna
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: Cook the beef until no longer pink. Drain when done, then stir in the taco seasoning. Set aside.
Step 3: Whisk the eggs and ricotta cheese in a bowl until blended.
Step 4: Lay the lasagna noodles on a baking dish. For this, I used five noodles to make a large lasagna. On top, add a layer of ricotta mixture followed by a layer of beef, 1/3 salsa, then cheese. Feel free to adjust the quantity of the beef and ricotta mixture to your preference.
Step 5: Do the same steps two more times. Then, place in the preheated oven and bake the lasagna for about 40 minutes, covered.
Step 6: Remove from the oven when done and allow the taco lasagna to cook before slicing.
Step 7: Before serving, top the lasagna with a dollop of sour cream, chopped green onions, and diced tomatoes. Enjoy!
