Stuffed Meatloaf – Keto/Low Carb

Prep time: 20 mins | Cook time: 1 hr 30 mins | Additional time: 15 mins | Total time: 2 hrs 5 mins

I recreated my mom’s famous meatloaf. It’s very comforting, delicious, and the best part is, it’s low carb and keto-friendly. The secret to my mom’s meatloaf is the sauteed onions. It makes so much difference along with the gooey cheese, which compliments the ground beef well.

This meatloaf is not your typical meatloaf. It’s not the ketchup on top meatloaf that we used to. It’s way better, and it tastes superb! Also, if you are looking for a low-carb and keto meatloaf, this is it!

Ingredients

2 large eggs

2 pounds ground beef

1/2 c. almond flour

8 ounces sliced provolone cheese

1/2 large onion, chopped and sauteed

chopped parsley

salt and pepper to taste

How to make Keto/Low Carb Stuffed Meatloaf

Step 1: Saute the chopped onions in little oil. Set aside when done.

Step 2: Place the ground beef, almond flour, eggs, chopped parsley in a large bowl. Mix well, then add the cooled onions and mix again.

Step 3: Line a glass loaf pan with about 2/3 – 3/4 of the meat mixture, shaping a cavity in the centre. Make sure to keep even edges.

Step 4: Using half of the cheese slices (about 4 to 6), line the cavity, then top with the rest of the meat mixture to cover the cavity/cheese. On top, add the rest of the slices of cheese.

Step 5: Tent the pan with foil. Place a 400 degrees oven and bake the meatloaf for about 1 hour to 1 hour and minutes.

Step 6: Remove the foil and resume baking for additional 10 minutes or until the cheese has melted and the edges turned brown.

Step 7: Before taking the meatloaf out of the pan, make sure to drain the excess grease. Allow the meatloaf to slightly cool, then slice.

Step 8: Serve and enjoy!
