FOR THE GRAHAM CRACKER CRUST
1 1/2 cups graham cracker crumbs
1/4 cup sugar
6 tablespoons butter melted
FOR THE PIE FILLING
1 box (8 ounces) cream cheese
3/4 teaspoon vanilla extract
1/2 cup powdered sugar
1 cup whipping cream
FOR THE STRAWBERRY TOPPING
2 tablespoons cornstarch
1/4 cup sugar
2 tablespoons strawberry gelatin
1/2 cup water
1 tablespoon lemon juice
3 cups strawberries hulled
How to Make Strawberry Cream Cheese Pie
Step 1: In a bowl, combine the graham cracker crumbs, 1/4 cup of sugar, and melted butter. Mix well.
Step 2: Then, press the crumb mixture firmly into the bottom and up sides of a 9-inch pie dish.
Step 3: Place the dish inside the oven and bake at 350 degrees for about 8 to 9 minutes. Once done, remove from the oven and let it cool for at least 30 minutes.
Step 4: Beat the cream cheese with a mixer until smooth. Then, add in the vanilla extract and powdered sugar while beating continuously until smooth.
Step 5: Whip the cream in another bowl until soft peaks form. Then, fold in the cream cheese mixture and delicately spread onto the baked crust. Place in the fridge to chill for at least an hour or two.
Step 6: Whisk the cornstarch, 1/4 cup of sugar, strawberry gelatin, water, and lemon juice in a small saucepan. Cook the mixture on low heat while constantly whisking until thickened. Then, remove the saucepan from the heat and cool for about 10 to 15 minutes.
step 7: Once the strawberry topping cooled, add in the strawberries and stir to coat. Layer the pie with the glazed strawberries and chill until ready to serve.
