2 tablespoons olive oil
1 tablespoon butter
3-4 potatoes, cubed
1 (14 oz) package Hillshire Farm Smoked Sausage, sliced
2 peppers, diced (red, green, or orange)
1 medium onion, thinly sliced
2 garlic cloves, minced
salt and pepper to taste
optional seasonings: Italian seasoning or Cajun
HOW TO MAKE SMOKED SAUSAGE HASH
Step 1: In a large skillet or cast iron, heat olive oil and butter over medium-high heat. Once hot, add in the potatoes and season with salt and pepper.
Step 2: Cook the potatoes for about 10 to 15 minutes, stirring occasionally until your desired crispiness. Using a slotted spoon, remove the potatoes from the skillet and set them aside.
Step 3: Adjust the heat to medium. In the same skillet, cook the smoked sausage for about 2 to 3 minutes per side until lightly browned.
Step 4: To the skillet, add the onions and peppers. Cook until the onions are soft and translucent and peppers are tender, stirring occasionally. Add in the garlic and continue to cook for another 30 seconds. To taste, season with salt and pepper.
Step 5: Add the potatoes back to the skillet, stir, and cook for a minute or two more. Adjust the seasoning according to taste.
NOTE:
You can cook the potatoes in a separate skillet and the smoked sausage and vegetables in another. This will save you time.
