I have found this recipe not long ago, and it immediately became my favourite and go-to. Slow cooker recipes are my favourite because I can whip up a meal for my family without spending too much effort and time in the kitchen. And being able to enjoy these bbq must-haves even on regular days is life-changing! With impressive flavours from the combination of smoked sausage, red potatoes, corn on the cob, onion, lemon juice, seafood seasoning, black pepper, and beer, I’m pretty sure you’ll want this on your regular rotation!
I like serving this low country boil on parchment paper, newspaper or if I’m hosting a party or bbq, I pour this in the nearest picnic table. Pair it with baguettes, cocktail sauce, and beers. Treat your family to this easy slow cooker meal anytime!

Ingredients
1 lb smoked sausage, cut into 1” pieces
8 small red potatoes, quartered
4 ears corn-on-the-cob, cut into 2” pieces
1 medium onion, cut into wedges
1/4 c. plus 1 tsp seafood seasoning, divided
1 tsp ground black pepper
Juice from 1 medium lemon
12 oz. beer
1 lb medium (16-20 count) shrimp with shells
How to make Slow Cooker Low Country Boil
Step 1: Place the sausage, potatoes, corn, onion, 1/4 cup seafood seasoning, black pepper, and lemon juice in a slow cooker. Toss well, then pour in the beer.
Step 2: Put the lid on and set to cook on high for 2 to 2 1/2 hours or 4 1/2 to 5 hours on low.
Step 3: Toss the shrimp with the rest of the 1 tsp seafood seasoning in a small bowl. To the pot, add the shrimp and resume cooking for 20 to 30 minutes more until the shrimps are pink.
Tip:
Before adding the shrimp, make sure to check the potatoes by poking them with a fork. If they are fork-tender, add the shrimp. This will prevent the shrimps from overcooking.
