½ c. unsalted butter, melted
1 c. white sugar
¼ c. unsweetened cocoa powder
1 oz. red food colouring
1 tsp vanilla extract
1 tsp distilled white vinegar
¼ tsp salt

How to make Red Velvet Cheesecake Swirl Brownies
Step 1: Prepare the oven. Preheat it to 350 degrees F or 175 degrees C. Get an 8×8-inches baking pan ready, grease, and set aside.
Step 2: In a large mixing bowl, whisk the melted butter with a cup of sugar. Add in the cocoa, red food colouring, a tsp vanilla extract, vinegar, and salt one at a time, whisking every after each addition. Then, stir in two eggs until completely incorporated.
Step 3: Into the cocoa mixture, stir in the flour until just combined. Reserve 1/4 cup of the batter and pour the rest into the prepared baking dish.
Step 4: In a bowl, add the cream cheese and beat with an electric mixer on medium speed until light and fluffy. Add in 1/4 cup sugar, 1 egg, and 1/4 tsp vanilla extract, beating for about 3 to 4 minutes until thoroughly combined and only small lumps remain.
Step 5: Over the batter in the pan, spoon in dollops the cream cheese mixture. Using a knife or an offset spatula, gently smooth the tops of the dollops evenly, making sure not to over mix. Drizzle over the reserved 1/4 cup of batter, then, drag a skewer or knife through the butter and cream cheese mixture to make swirls.
Step 6: Place in the preheated oven and bake for about 30 to 35 minutes until a toothpick inserted in the middle of the brownie comes out clean. Remove from the oven once done and let it cool completely before slicing into bars. Cover and store in the fridge.
