Tender beef with scrumptious creamy gravy, this Beef Stroganoff is one of our long-time favourites. Quick to prep with simple ingredients. This easy low carb slow cooker dish is insanely delicious making this perfect for a special gathering or dinner party.
Ingredients
2½ lbs of beef stew meat
1 (10.5 ounces) can cream of mushroom soup (or 1 recipe of Keto Condensed Cream of Mushroom Soup)
1 packet of dried onion soup mix
8 oz. of fresh mushrooms, sliced (or 8 ounces canned mushrooms, drained)
1 c. sour cream
8 oz. of cream cheese (softened)
salt and pepper, to taste
parsley or thyme
Optional thickener: 1/2 teaspoon xanthan gum
How to make Quick Low Carb Slow Cooker Beef Stroganoff
Step 1: Using a non-stick spray, grease your crockpot.
Step 2: To the greased crockpot, add the beef stew meat, cream of mushroom soup, onion soup mix, and sliced mushrooms. Stir well. Set on low and cook for 6 to 8 hours.
Step 3: Add in the cream cheese about 30 minutes before serving and let it melt into the stroganoff, stirring occasionally until incorporated. Stir in the sour cream, then season with salt and pepper.
Step 4: For keto and low carb options, serve the Beef Stroganoff over riced cauliflower. Or over egg noodles or rice. Garnish with parsley or thyme. Enjoy!
Notes:
For the low-carb option, using both regular cream of mushroom soup or cream of golden mushroom is perfectly okay.
Thickener option (low carb), dissolve half a tsp xantham gum with a tsp olive oil. Stir this to the sauce, letting the sauce thicken before serving.
