1 tbsp extra-virgin olive oil
6 medium flour tortillas
1 large onion, chopped
1 tsp ground cumin
2 cloves garlic, minced
1 tsp chilli powder
2 tbsp tomato paste
2 tomatoes, chopped
1 c. shredded Monterey jack
1 c. shredded cheddar
Kosher salt
Freshly ground black pepper
Cooking spray
TOPPINGS:
Fresh cilantro
Sour cream
Pico de gallo
HOW TO MAKE QUESADILLA CAKE
Step 1: Ready the oven and preheat it to 400 degrees. Grease an 8 to 9-inch springform pan using a cooking spray.
Step 2: In a large skillet, heat the oil over medium heat. Add the onion to the hot oil and cook for about 5 minutes until soft. Then, add the garlic and spices, then continue to cook for a minute more until fragrant. Now, add the ground beef and cook for another 6 minutes, breaking the meat into chunks with a wooden spoon until browned. Drain the excess grease when done.
Step 3: Place the beef mixture along with the tomatoes and tomato paste into the skillet. Stir and cook over medium heat for additional 2 minutes. Season with salt and pepper according to taste.
Step 4: Place the tortilla on the bottom of the prepared springform pan. Spread a layer of the beef mixture on top, then sprinkle with cheese. Repeat the layers five times, ending with cheese.
Step 5: Bake in the preheated oven for approximately 20 minutes or until the tortillas are warmed through and the cheese has melted. When done, take the pan out of the oven and let the cake cool for at least 5 minutes in the pan.
Step 6: Garnish the quesadilla cake with your preferred toppings. Slice and serve. Enjoy!
