Peanut Brittle Recipe | Made in the Microwave!

This traditional dessert is a favourite of many because not only that it’s delicious but you can whip this up in no time. What if I tell you that these treats you can also (easily) throw together in the microwave? This amazing recipe will shock you. But come to think of it, I already thought of using the microwave for a lot of recipes but failed to try. Thank goodness someone made it possible for a lot of us. With simple ingredients, added a little at a time is all it takes to make this popular holiday treat.

There is no special trick to make the best Peanut Brittle. Unlike my other peanut brittle recipe, this is what I prefer the most. Easy and comes out great always. The only thing you should know is to make sure to cook the brittle long enough to avoid the soft sticky mess.

Ingredients

1 c. White Karo

2 c. Raw Peanuts

2 c. Sugar

1 teaspoon salt

2 tbsp Butter

2 teaspoons Vanilla

2 teaspoons Baking Soda

How to make Peanut Brittle in the Microwave

Step 1: In a 3-quart casserole dish (microwave safe), add the Karo syrup, raw peanuts, sugar, and salt. Microwave for about 4 minutes on high heat.

Step 2: Remove the dish from the microwave and stir. Return to the microwave and heat for another 4 minutes. Repeat the stirring and heating for another 4 minutes one more time.

Step 3: Take out of the microwave, stir, and again cook for two minutes more on high.

Step 4: When the last two minutes are up, remove from the microwave, and add in the butter and vanilla extract. Return to the microwave and heat for a minute more on high.

Step 5: Gently stir the baking soda into the mixture until light and fluffy. Transfer on a lined baking sheet and let it cool for at least an hour before breaking into pieces.
