This is the ultimate big breakfast! Hashbrown, sausage, cheese, eggs, and milk in one satisfying casserole. All my fave breakfast staple combined. Plus, it is super easy to throw together, you can even prep this the night before, place it in the fridge, and just pop it in the oven the next day.
It’s a family tradition to eat breakfast at a big table with all our favourite dishes. The one dish that completes our Christmas morning is this Overnight Cheesy Sausage and Hashbrown Breakfast Casserole. The others can go but not this delicious casserole. It’s a must not only for a Christmas morning breakfast but all year round!

Ingredients
2 c. shredded mild cheddar
1 30-ounces bag frozen shredded hash browns
2 pounds breakfast sausage hot if you want a more kick
2 c. milk
8 medium eggs
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon pepper
How to make Overnight Cheesy Sausage and Hashbrown Breakfast Casserole
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: Cook the sausage in a large frying pan until brown. Drain the excess grease when done and set the sausage aside.
Step 3: Lightly brown the hash brown in the same frying pan. You can do this in two batches if your skillet is smaller. Then, into a greased 9 x 13-inch casserole dish, transfer the hash browns and top with the cooked sausage and cheese.
Step 4: Place the eggs, milk, and all spices in a medium bowl. Whisk well until combined, then pour this over the casserole mixture.
Step 5: Using aluminium foil, cover the casserole dish and store it in the fridge overnight.
Step 6: If baking on the same day, place in the preheated oven and bake for about 40 minutes, uncovered until the cheese begins to bubble and the top is brown.
