If you are looking for an easy and quick dinner idea to serve tonight, then you are in the right place. I recently tried this oven-baked Greek chicken thighs recipe, and it was amazing! Not only that this is super easy to throw together using a few simple ingredients, but it is ready in a cinch. Some things I need, especially on the busiest days. My family immediately love this dish. The chicken is marinated in a combination of Greek yoghurt, lemon, garlic, and spices for at least fifteen minutes and baked until juicy. I prefer to marinate the chicken for longer for maximum flavour, so I prep this before I go to work. The chicken once baked turned out juicy, tender, and crazy flavorful! I also love the slightly brown and crispy exterior of the chicken. Serve these oven-baked Greek chicken thighs with a simple side salad for an easy and quick meal any time of the week!

Ingredients

1.5 lbs boneless skinless chicken thighs

Marinade:

¼ c. olive oil

½ c. plain Greek yoghurt full fat preferred

⅓ c. lemon juice

zest of one lemon

4-5 cloves garlic pressed or minced

1 tsp kosher salt

½ tsp freshly ground black pepper

2 tbsp dried Italian seasoning (I used a homemade blend)

How to make Oven Baked Greek Chicken Thighs

Step 1: Combine the marinade ingredients (olive oil, plain Greek yoghurt, lemon juice, zest, garlic cloves, kosher salt, freshly ground black pepper, and dried Italian seasoning) until well combined. Add the chicken and toss to coat. Marinate the chicken for at least 15 minutes or place it in the fridge overnight.

Step 2: Prepare the oven when ready to cook. Preheat it to 425 degrees F.

Step 3: Using foil, line a baking sheet. In a single layer, arrange the chicken. Place in the preheated oven and bake for about 20 to 25 minutes or until completely cooked.
