This Oven Baked Chicken Parmesan is an easy dish to make, not to mention healthy and fast! The perfect weeknight dinner served with your fave pasta on the side. Enjoy!

2 tbsp olive oil
2 chicken breasts (about 1 lb of chicken in total)
1 Egg
1 c. panko bread crumbs
1/2 c. Parmesan cheese fresh grated
1 tsp dried oregano
1/2 tsp garlic powder
1 tsp kosher salt
1/2 tsp black pepper
1 c. marinara sauce
1 ½ c. shredded mozzarella
2 tbsp minced parsley optional, for garnish
HOW TO MAKE OVEN-BAKED CHICKEN PARMESAN
Step 1: With foil, line a baking sheet and grease with olive oil. Position the oven rack to the middle position and preheat the oven to 400 degrees F.
Step 2: In half, slice the chicken breasts, then pound them to an even thickness. Start cutting through the middle of the chicken breasts like a butterfly, opening it like a book, and cutting all the way through to make 2 equal-sized pieces.
Step 3: In a gallon-sized zip-top bag, place the chicken in an even layer. Seal the bag and pound the chicken using a meat pounder or rolling pin to an even thickness. Alternately, you can just put the chicken between 2 layers of cling wrap as an alternative to a zip-top bag.
Step 4: Using a paper towel, pat the chicken breasts dry and season with salt and pepper.
Step 5: Combine the panko bread crumbs, grated parmesan cheese, salt, pepper, garlic powder, oregano, and black pepper in a shallow dish. Then, beat one egg in another.
Step 6: Into the egg, dip one chicken breast, clothing the chicken entirely. Then, transfer it into the bread crumb mixture, completely coating it in the crumb mixture and gently pressing it using your hand to ensure the crumbs stick to the chicken. On the prepared baking sheet, place the chicken breast. Do the same process with the rest of the chicken pieces.
Step 7: To the preheated oven, place the chicken and bake for about 15 minutes until thoroughly cooked.
Step 8: Remove the chicken from the oven when done and flip them. On top of each chicken piece, pour 1/4 cup of the marinara sauce and sprinkle with cheese. Return to the oven and broil for about 2 to 4 minutes until the cheese has melted and bubbly and the edges of the chicken getting brown.
