How to make Orange Blueberry Muffin Bread with Orange Cream Cheese Icing
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: Cream the butter and sugar in a large bowl. Add the eggs a piece at a time, whisking well every after each addition. Then, add the grated orange zest followed by the vanilla, yoghurt, and milk. Beat well until incorporated.
Step 3: Mix the flour, baking powder, and salt in another bowl. Fold in the blueberries.
Step 4: To the dry ingredients, add the wet and mix well until just combined and the batter is very thick.
Step 5:Into a greased 9 x 5-inch loaf pan, scoop the batter. Place in the preheated oven and bake for about 70 minutes or until a toothpick inserted in the middle of the loaf comes out clean. You can tent the loaf with a piece of foil if the top begins to get too brown quickly.
Step 6: When done, take the pan out of the oven and let the bread cool in the pan for about 10 minutes. Remove from the pan after 10 minutes and allow the bread to cool completely before topping with the orange cream cheese icing.
Orange Cream Cheese Icing:
Step 7: Pop the cream cheese in the microwave for about 15 seconds or until very soft. Add the rest of the ingredients to the cream cheese and stir until smooth and creamy. As needed, add more orange juice until you reached your desired consistency.
