A delicious one-pot meal with chicken, sliced peppers in a creamy sauce that you can easily and quickly throw together. My celebratory dish, so good, creamy, with irresistible fresh ingredients.
Ingredients
1 lb chicken breast, cut into 1-inch pieces
2 to 3 tsp cajun seasoning
2 tbsp olive oil
1/2 c. diced yellow onion
1 tbsp minced garlic
2 1/2 c. uncooked penne pasta
2 c. chicken broth
1/3 c. water
1 small red bell pepper, seeds removed and sliced into thin strips
1 small yellow bell pepper, seeds removed and sliced into thin strips
4 oz cream cheese
1/2 c. shredded from the block Parmesan cheese
freshly chopped parsley, for garnish
HOW TO MAKE ONE POT CAJUN CHICKEN PASTA
Step 1: With a tsp Cajun seasoning, season the chicken and set it aside.
Step 2: Heat olive oil in a 12-inch pan or skillet over medium heat. Once the oil is hot, add the onions. Cook for about 3 minutes, stirring until soft.
Step 3: Into the pan, add the chicken and cook both sides until brown.
Step 4: Add in the garlic and cook for a minute more, stirring.
Step 5: Add to the pan the uncooked pasta along with the chicken broth, water, sliced peppers, and the rest of the Cajun seasoning. Or add a tsp Cajun if you want mild heat or 2 tsp for a full Cajun flavour. Stir and bring to a boil.
Step 6: Adjust the heat to low and simmer for about 22 minutes, covered.
Step 7: Remove the cover and cook for 5 minutes more until the liquid is absorbed.
Step 8: take out from heat and quickly stir in the cream cheese and Parmesan cheese until melted.
Step 9: Before serving, garnish with fresh parsley. Enjoy immediately.
Note:
To make Homemade Cajun seasoning, mix a tsp paprika, a tsp garlic powder, half tsp onion powder, half tsp oregano, half tsp cayenne pepper, half tsp salt, 1/4 tsp black pepper, and 1/8 tsp red chilli flakes.
