Grilled eggplant combined with tomatoes, cucumber, onions in simple vinegar, ground black pepper, a bit of salt, and sugar mix. Yum! It’s my number favourite eggplant dish until this. 2 large eggplants
150 grams of flour
3 Eggs
500 g. of breadcrumbs
8 tbsp of tomato sauce
300 millilitres of cooking oil
150 g. of cooked ham
150 g. of mozzarella cheese
Oregano, to taste
Salt, to taste
How to make Neapolitan Eggplants
Step 1: About 1 cm thick, strip the eggplants lengthwise.
Step 2: In the flour, coat the slices of eggplant, then in eggs, finally in breadcrumbs.
Step 3: On each slice, place a tbsp tomato sauce, top with a half slice of ham, then mozzarella cheese.
Step 4: Cook them in the oven until they gratins.
Step 5: Before serving, sprinkle with oregano. Enjoy!
