Neapolitan Eggplants

Oh goodness! These Neapolitan Eggplants are seriously delicious. These Cheesy baked eggplants are vegetarian comfort food at its scrumptious! Simple but super tasty, easy and quick to throw together, and the queen of all vegetarian dishes!

I love the fact that you can dress eggplant in any form and it still is amazing no matter. I love eggplants even when I was young. There is this one dish that my nanny used to make. Grilled eggplant combined with tomatoes, cucumber, onions in simple vinegar, ground black pepper, a bit of salt, and sugar mix. Yum! It’s my number favourite eggplant dish until this. A pizza with an eggplant crust! Perfectly fun to make! A pick-me-up dish that requires only a few ingredients. Perfect for the kids and everyone that you can make in a heartbeat whenever.

Ingredients

2 large eggplants

150 grams of flour

3 Eggs

500 g. of breadcrumbs

8 tbsp of tomato sauce

300 millilitres of cooking oil

150 g. of cooked ham

150 g. of mozzarella cheese

Oregano, to taste

Salt, to taste

How to make Neapolitan Eggplants

Step 1: About 1 cm thick, strip the eggplants lengthwise.

Step 2: In the flour, coat the slices of eggplant, then in eggs, finally in breadcrumbs.

Step 3: On each slice, place a tbsp tomato sauce, top with a half slice of ham, then mozzarella cheese.

Step 4: Cook them in the oven until they gratins.

Step 5: Before serving, sprinkle with oregano. Enjoy!

Ingredients

  • 2 large eggplants
  • 150 grams of flour
  • 3 Eggs
