MONTEREY CHICKEN SPAGHETTI

If you are looking for another amazing recipe to try, I highly recommend this Monterey Chicken Spaghetti. It is loaded with chicken, spinach, and pasta and topped with crispy fried onions. It is super easy to throw together and ready in minutes! What I like most about this fantastic dish is this is perfect for busy days and the entire family. Not to mention packed with nutrients! This Monterey chicken spaghetti is another great addition to your favourite weeknight meal. Enjoy this as is or serve with your favourite side dishes.

Ingredients

1 egg beaten

2 chicken breasts cooked and chopped

2 10-oz. cans cream of chicken soup

1 cup sour cream

1 cup Monterey Jack Cheese shredded

1/2 cup Parmesan cheese shredded

12 oz. spaghetti

3 cloves garlic minced, or one tbsp garlic powder

6 oz. French fried onions divided, this is equal to one can

1 teaspoon onion powder

10 oz. package chopped spinach thawed

HOW TO MAKE MONTEREY CHICKEN SPAGHETTI

Step 1: Following the package directions, cook the spaghetti in a large pot with boiling water. Drain when done and rinse under cold water.

Step 2: Into a large mixing bowl, beat the egg.

Step 3: Ready the oven and preheat it to 350 degrees F or 175 degrees C.

Step 4: Into the egg, add the sour cream, chopped cooked chicken, Parmesan cheese, cream of chicken soup, spinach, 1/2 of the fried onions, Monterey Jack cheese, onion powder, and garlic. Mix well then, add the cooked pasta and toss until well coated.

Step 5: Pour the mixture into a greased 9 x 13-inch baking dish. Cover with foil and place in the preheated oven. Bake for approximately 30 minutes. Uncover and sprinkle with the remaining onions. Continue to bake for additional 5 minutes or until the onions are crisp and golden brown.

Step 6: Serve right away when done. Enjoy!
