These mini meatloaf muffins are always a huge hit and a scene-stealer! My kids love this mini version, and it’s perfect for entertaining, too! We like these meatloaf muffins with mashed potatoes, some greens (such as roasted veggies or a simple side salad), and extra sauce for an easy and quick weeknight meal. The best part is this recipe is healthier than traditional meatloaf.

1/2 c. onion, chopped
2/3 c. panko bread crumbs
1 tbsp barbecue sauce
1 1/2 lbs lean ground beef (or ground turkey)
1 tbsp mustard
1/2 tsp garlic powder
1 1/2 tsp chilli powder
1 Egg, lightly beaten
1/2 tsp freshly ground black pepper
1/2 tsp salt
Meatloaf sauce:
1/2 c. ketchup
1/4 tsp ground nutmeg
2 tsp Dijon mustard
1/3 c. light brown sugar
How to make Mini Meatloaf Muffins
Step 1: Prepare the oven. Preheat it to 350 degrees F.
Step 2: Place the ground beef, breadcrumbs, onion, 1 Tbsp barbecue sauce, mustard, chilli powder, garlic powder, salt, pepper, and egg in a large mixing bowl. Mix well using your hands or a big spoon.
Step 3: Among the 12 cups in a standard muffin tin, divide the mixture and press each down to fill the cup. Then, place in the preheated oven and bake for about 15 minutes.
Step 4: While the meatloaf muffins are baking, place the sauce ingredients (light brown sugar, ketchup, Dijon mustard, and ground nutmeg) in a small bowl. Whisk until well combined.
Step 5: When the meatloaf muffins are done, take them out of the oven. Soak any grease on the meatloaf using a paper towel.
Step 6: Over each mini meatloaf, liberally spoon the sauce. Place in the oven again and resume baking for another 10 to 15 minutes or until the meat is cooked through.
Step 7: Remove from the oven when done and serve the mini meatloaf muffins with mashed potatoes and any extra sauce. Enjoy!
