Mini Meatloaf Muffins

I love this recipe more than the other meatloaf recipes I’ve tried. It’s easier, healthier, and better! In my opinion, this is much family and kid-friendly and pairs so well with not only mashed potatoes but with your favourite roasted veggies or a small side salad, and don’t forget the extra sauce! A great rotation to your traditional meatloaf.

Ingredients

1 1/2 lbs lean ground beef (or ground turkey)

2/3 c. Panko bread crumbs

1/2 c. onion, chopped

1 tbsp barbecue sauce

1 tbsp mustard

1/2 tsp garlic powder

1 1/2 tsp chilli powder

1/2 tsp salt

1/2 tsp freshly ground black pepper

1 Egg, lightly beaten

Meatloaf sauce:

1/3 c. light brown sugar

1/2 c. ketchup

2 tsp Dijon mustard

1/4 tsp ground nutmeg

How to make Mini Meatloaf Muffins

Step 1: Prepare the oven. Preheat it to 350 degrees F.

Step 2: Place the ground beef, breadcrumbs, onion, a tbsp barbecue sauce, mustard, chilli powder, garlic powder, salt, pepper, and egg in a large mixing bowl. Mix using a large spoon or your hands until just combined.

Step 3: Among 12 cups in a standard muffin tin, divide the mixture. To fill the cup, press the mixture. Place in the preheated oven and bake for about 15 minutes.

Step 4: Meanwhile, combine the sauce ingredients (light brown sugar, ketchup, Dijon mustard, and ground nutmeg) in a small bowl until well mixed.

Step 5: Take the meatloaf out of the oven when done and soak up the grease from the meatloaf using a paper towel.

Step 6: Over each mini meatloaf, generously spoon the sauce. Place the tin back in the oven and bake for another 10 to 15 minutes until the meat is thoroughly cooked.

Step 7: When done, serve the mini meatloaf muffins with mashed potatoes and extra sauce. Enjoy!
