Ingredients
1 c. Parmesan cheese (or sharp Cheddar, or Asiago) divided
4 boneless, skinless chicken breasts trimmed of excess fat
1 c. mayonnaise (or Greek yoghurt for a healthier option)
1 teaspoon seasoning salt
1 teaspoon garlic powder
1/2 teaspoon black pepper
How to make Melt in Your Mouth Chicken
Step 1: Into 3 large strips or chunks, cut each chicken breast and place the pieces in a bowl with milk/buttermilk. Allow the chicken strips/chunks to soak in the milk. buttermilk for at least 20 to 30 minutes or overnight.
Step 2: Prepare the oven. Preheat it to 375 degrees F.
Step 3: Place the mayonnaise, 1/2 cup of Parmesan cheese, and seasonings in a small bowl. Mix well.
Step 4: Into a 9 x 13-inch baking dish, place the chicken. Evenly spread the mixture on top and sprinkle with the rest of the Parmesan.
Step 5: Place the baking dish in the preheated oven and bake the chicken for about 40 to 45 minutes or until cooked through. Shift the oven to the broiler for a minute or two to get the top extra browned.
Step 6: Remove from the oven when done and serve the chicken with veggies such as steamed fresh broccoli. If desired, season with some fresh parsley. Enjoy!
