Mediterranean Crescent Ring

Throw this classic ring using Mediterranean-inspired ingredients in less than an hour and impress everyone with the beautiful presentation and superb deliciousness of this Mediterranean Crescent Ring! The simple filling made with spinach and artichokes, cheeses, roasted peppers, and olives has the perfect combo of salty and tangy Mediterranean flavour that is to die for!

INGREDIENTS

1 egg white lightly beaten

2 8 ounces pkg crescent rolls

1 12 ounces jar marinated artichoke hearts, chopped

1 10 ounces pkg chopped spinach, thawed and water squeezed out

2 tablespoons pine nuts lightly toasted

½ c. diced roasted red bell pepper

¼ c. finely chopped calamata olives

¼ teaspoon fresh cracked pepper

1 clove garlic minced

2 teaspoons fresh chopped dill

2 tablespoons fresh grated Parmigiano-Reggiano cheese

cooking spray

½ c. mayonnaise

1 c. shredded mozzarella cheese

½ c. garlic and herb-flavoured feta cheese

How to make Mediterranean Crescent Ring

Step 1: Whisk the spinach, marinated artichoke hearts, mozzarella cheese, garlic and herb-flavoured feta cheese, roasted red bell pepper, calamata olives, lightly toasted pine nuts, fresh cracked pepper, mayonnaise, garlic, and dill in a bowl using a fork until well combined. Set aside.

Step 2: Lightly grease a large bake sheet with cooking spray. Arrange the crescent dough separating them into triangles along the perforations onto the baking sheet, laying them slightly overlapping at the corners. This way the short end of the triangles creates a circle.

Step 3: Around the circle created by the overlapping dough triangles, spoon the spinach filling. Over the filling, gently fold the long end of each triangle to make the ring. Then, lightly brush the dough with the egg white and sprinkle with Parmesan cheese.

Step 4: Place the baking dish in a preheated 375 degrees F oven and bake the crescent ring for about 20 minutes or until the filling is heated through and the crescent dough has browned and toasty. Remove from the oven when done, slice, and serve. Enjoy!
