This is my ultimate favourite comfort food! Fork tender potatoes topped with bacon, cheese, and green onions and drizzled with sour cream. A pretty simple recipe that caught the attention of many particularly the picky eaters! Feel free to add whatever your heart desires like some pickled jalapenos if you want it with a little kick or blue cheese crumbles if you are feeling a bit funky. Don’t be afraid because this dish is going to be fantastic no matter what!
Slow cooker recipes remind me of the movie “Cloudy with a Chance of Meatballs”. Anyone who watched the movie is well aware of the food machine that was invented by Flint Lockwood. The food machine that was responsible for raining food in the movie. It’s like a slow cooker, all you need is to dump the ingredients and leave to cook. Just like the food machine, all Flint needed was to set it, and boom! I know I watched a lot of kids’ movies lately, joining my youngsters as they sit on the sofa and binge-watch their fave cartoons. But really, these Loaded Slow Cooker Potatoes are a must!

INGREDIENTS
Cooking spray
2 pounds baby potatoes, halved and quartered if large
3 cups shredded Cheddar
2 cloves garlic, thinly sliced
8 slices bacon, cooked
1/4 cup sliced green onions, plus more for garnish
1 tablespoon paprika
kosher salt
Freshly ground black pepper
Sour cream, drizzling
How to make Loaded Slow-Cooker Potatoes
Step 1: Using foil, line a slow cooker and grease with cooking spray. To the bottom of the prepared slow cooker, add half of the potatoes, 1 1/4 cups cheese, half the garlic, 1/3 of the cooked bacon, half the green onions, and half the paprika, then season with salt and pepper. Repeat the same layers one more time.
Step 2: Cover with the lid, set on high, and cook the potatoes for 5 to 6 hours until tender. Note that the bigger the potatoes, the longer they cook.
Step 3: Top the potatoes with the rest of the cheese and bacon about 20 to 30 minutes before serving. Then, garnish with extra green onions and drizzle with sour cream. Enjoy!
