Lemon Bread

PREP TIME: 15 MINS | COOK TIME: 50 MINS | TOTAL TIME: 1 HR 5 MINS | SERVINGS: 12 slices

Enjoy the tangy and sweet flavour of this delicious lemon bread. It is a very simple, light, and fresh bread made with Greek yoghurt, olive oil, and honey.

INGREDIENTS

Bread:

3 eggs

1 c. plain Greek yoghurt

½ c. olive oil

1 c. cane sugar

¼ c. lemon juice

2 tbsp lemon zest

1 ½ c. all-purpose flour

1 ½ tsp baking powder

¼ tsp salt

¼ tsp baking soda

Syrup:

Zest of two lemons

¼ c. honey

2 tbsp lemon juice

How to make Lemon Bread

To make the bread:

Step 1: Prepare the oven. Preheat it to 350 degrees F. Line a greased loaf pan with parchment paper.

Step 2: Combine the yoghurt, olive oil, cane sugar, lemon zest, and lemon juice in a large bowl until well blended. Add the eggs a piece at a time, beating every after each addition until smooth.

Step 3: Then, add the flour along with the baking powder, baking soda, and salt. Mix well until just blended.

Step 4: Into the loaf pan, pour the batter. Place in the preheated oven and bake for about 45 to 50 minutes until a toothpick inserted in the centre of the bread comes out clean.

Step 5: Remove from the oven when done and let the bread cool for about 15 to 20 minutes in the pan before inverting to a cooling rack.

To make the Syrup:

Step 6: In a heavy-bottomed saucepan, combine the honey and lemon juice. Cook over medium-low heat until the honey has dissolved.

Step 7: Then, add the lemon zest and boil for about 2 minutes. Take the pan off the heat and let the bubbles settle.

Step 8: In several places, prick the top of the loaf using a toothpick, then evenly pour the hot syrup on top. Let the syrup cool for at least 20 minutes. Enjoy!
