Unlike our usual lasagna, these lasagna roll-ups are so much easier to serve, bake much faster, and can be served right away (no resting time needed). These roll-ups are also great to make in advance. They freeze and reheat well, too!

16 ounces ground beef, 85% lean
12 lasagna noodles, cooked to package directions
24 ounces marinara sauce
3 garlic cloves, minced
1/2 c. diced onion
1 teaspoon sea salt, or to taste for red sauce
1/2 teaspoon dried oregano
1 large egg
15 ounces ricotta cheese
3 c. mozzarella cheese, shredded, divided
1/4 c. Parmesan cheese, shredded
1/4 c. parsley, chopped, plus more to garnish
1/2 teaspoon black pepper, or to taste
How to make Lasagna Roll-Ups
Step 1: Prepare the oven. Preheat it to 375 degrees F.
Step 2: In a large pot of salted water, cook the noodles following the package directions. Drain when done and fill the top with cold water. This will stop the cooking process and keep noodles from sticking.
Step 3: Cook the ground beef in a deep pan or Dutch oven for about 2 minutes over medium-high heat, breaking the meat using a spatula as it cooks. Then, add the onion and continue to cook for additional 3 minutes until soft. Next, add the garlic, 1 teaspoon salt, half teaspoon pepper, and half teaspoon oregano. Saute for a minute more before adding in the marinara. Bring everything to a simmer, then turn the heat off.
Step 4: On the bottom of a casserole dish, spread a half cup of the meat sauce.
Step 5: Combine the ricotta, 1 egg, 1/4 cup Parmesan cheese, 1 1/2 cups mozzarella cheese, and 1/4 cup parsley in a large bowl until well mixed.
Step 6: In a single layer, arrange the noodles over a large baking sheet. Over each noodle, spread 1/4 cup (1 scant ice cream scoop) of the cheese mixture. In a strip down the middle of the noodle, add a heaping tablespoon of the meat sauce. Toll each noodle and arrange them in the prepared casserole dish.
Step 7: On top of the roll-ups, spread the rest of the meat sauce, then sprinkle with the rest of the 1 1/2 cups mozzarella cheese. Tent the dish with foil. Make sure the foil is not touching the cheese. Place in the preheated oven and bake the roll-ups for about 40 minutes. Uncover and broil for about 2 to 3 minutes until the cheese is lightly golden.
Step 8: Remove from the oven when done and serve the lasagna roll-ups garnished with parsley. Enjoy!

Step 8: Remove from the oven when done and serve the lasagna roll-ups garnished with parsley. Enjoy!
