I’m glad I’ve found this incredible recipe. Easy to throw together, freezer-friendly, and reheat well. All the same goodness but unlike the traditional lasagna, you can enjoy this right away!

12 lasagna noodles cooked to package instructions
16 ounces ground beef 85% lean
24 ounces marinara sauce
1/2 c. diced onion
3 garlic cloves minced
1 teaspoon sea salt or to taste for red sauce
1/2 teaspoon black pepper or to taste
1/2 teaspoon dried oregano
15 ounces ricotta cheese
1 large egg
1/4 c. Parmesan cheese shredded
3 c. mozzarella cheese shredded, divided
1/4 c. parsley chopped, plus more to garnish
How to make Lasagna Roll-Ups
Step 1: Prepare the oven. Preheat it to 375 degrees F.
Step 2: According to package directions, cook the noodles in a large pot of salted water. Drain the noodles and put them back in the pot. To stop the cooking process and keep the noodles from sticking together, pour some cold water into the pot.
Step 3: Cook the ground beef in a deep pan or Dutch oven over medium-high heat for about 2 minutes until no longer pink, breaking the meat up with a spatula while it cooks. Add in the onion and continue to cook for another 3 minutes until soft. Then, add in the garlic, a tsp salt, half a tsp pepper, and half a tsp oregano. Stir and cook for a minute more. Add the marinara sauce to the pot and bring to a simmer. Once the sauce is simmering, turn the heat off.
Step 4: On the bottom of a casserole dish, evenly spread half of the meat sauce.
Step 5: Combine the ricotta, 1 egg, 1/4 Parmesan cheese, 1 1/2 cups mozzarella cheese, and 1/4 cup parsley in a large bowl.
Step 6: In a single layer, arrange the noodles on a large baking sheet, and on each noodle spread 1/4 cup or a scant ice cream scoop of the cheese mixture. In a strip down the middle of the noodle, add a heaping tbsp of the meat sauce.
Step 7: Roll the noodles up, then arrange the rolled noodle in the prepared casserole dish.
Step 8: On top of the roll-ups, spread the rest of the meat sauce and sprinkle with the rest of the 1 1/2 cups mozzarella cheese. Cover the dish with foil, just make sure that the foil is not touching the cheese. Place inside the preheated oven and bake for about 40 minutes.
Step 9: Uncover and broil the roll-ups for about 2 to 3 minutes until the cheese is lightly golden.
Step 10: Before serving, garnish with some parsley. Enjoy!
