This made my day! I love zucchini and I have been making a lot of zucchini recipes and this by far is one of the best. Simple yet outrageously delicious. Super easy and quick to make and calls for only a few readily available ingredients. This baked zucchini with bread crumbs and parmesan is worth everything. If you haven’t tried it, you are missing out big time! This crunchy and cheesy side dish goes along with just about any variety of meat dishes. A healthy side dish that even your picky eaters will enjoy. We are all aware of the health benefits of zucchini and why it is so good for us. And I cannot think of anything more awesome and versatile than zucchinis. It is high in antioxidants, good for the heart, help for healthy digestion, aid weight loss (which is perfect for those who are trying to lose weight), and a lot more!

¼ cup oil, olive, salad or cooking
1 c of Progresso Italian Style Bread Crumbs PLB
½ cup Parmesan cheese, grated
1 tablespoon Garlic, raw
1 pinch Salt, table
HOW TO MAKE KITT’S OVEN-ROASTED ZUCCHINI
If you cook the zucchini at a 400 degrees F oven, it means you are roasting the zucchini instead of baking them. Meaning, they will grow a bit of char and the zucchini are less likely to become soggy.
To cook the zucchini evenly, make sure to allow spacing in your zucchini when putting them in the baking dish.
