Ingredients
4 tablespoons unsweetened cocoa powder
½ teaspoon baking powder
1 Egg large
2 tablespoons heavy cream
3 tablespoons erythritol
1 teaspoon vanilla extract
1 pinch salt
How to make Keto Lava Cake
Step 1: Prepare the oven. Preheat it to 350 degrees F.
Step 2: In a bowl, combine the erythritol and cocoa powder and set aside. If you like, you can reserve a tsp of this mixture for later.
Step 3: Add the eggs to another bowl. Whisk until soft.
Step 4: Into the erythritol and cocoa powder, pour the beaten egg. Then, add in the baking powder, vanilla, and cream. Mix well, then season with salt.
Step 5: Ready 2 muffin cups. Grease, then evenly divide the batter into the prepared cups. Place in the preheated oven and bake for about 10 minutes. Make sure not to over-bake the lava cake. We want the cake to have a soft consistency in the middle.
Step 6: Transfer the lava cakes to a plate and sprinkle them with the reserved cocoa-erythritol mixture.
