ITALIAN ROASTED MUSHROOMS AND VEGGIES

This simple and delicious Italian roasted mushrooms and veggies recipe is one of the easiest and quickest side dishes you can make. A perfect pair for just about anything with cremini mushrooms, cauliflower, and tomatoes tossed in pantry seasonings and baked to perfection!

I always love roasted tomatoes, but this recipe elevates my usual roasted tomatoes. The amazing flavours of the tomatoes just burst in your mouth, and the mushrooms, well, they are incredible!

I love simple recipes. I can make them with less effort using only a few ingredients. I can even swap the Italian seasoning with the same amounts of basil, oregano, rosemary, and thyme and except that it’s going to be equally good! If you want a bit of spice, you can add your desired amount of red pepper chili flakes. Make sure not to miss these roasted mushrooms and veggies. This will change your life forever!

INGREDIENTS

2 tbsp olive oil

1 lb cremini mushrooms cleaned

12 cloves garlic peeled

2 c. cocktail tomatoes

1 tbsp Italian seasoning

1 tbsp fresh parsley chopped

2 c. cauliflower cut into small florets

salt and pepper to taste

HOW TO MAKE ITALIAN ROASTED MUSHROOMS AND VEGGIES

Step 1: Prepare the oven. Preheat it to 400 degrees F.

Step 2: Add the mushrooms and veggies to a bowl. Drizzle them with olive oil and add the Italian seasoning, salt, and pepper. Toss everything until combined.

Step 3: To a baking sheet, spread everything. Put in the preheated oven and roast the mushrooms and veggies for about 20 to 30 minutes until the mushrooms are golden brown and cauliflower is soft.

Step 4: Remove from the oven when done and serve garnished with some fresh parsley. Enjoy!

NOTES:

You can use equal amounts of basil, oregano, rosemary, and thyme to replace Italian seasoning.

In an airtight container, place the roasted mushrooms and veggies and keep in the fridge for up to a week.
