INSTANT POT CINNAMON ROLLS

Prep Time: 15 mins | Cook Time: 20 mins | Additional Time: 30 mins | Total Time: 1 hr 5 mins | Yield: 12 Servings

Cinnamon rolls are my favourite! That is why I am very excited when I saw this recipe. Now, I can easily make cinnamon rolls at home with this Instant Pot recipe.

Ingredients

DOUGH:

3 eggs

1/2 cup (113 grams) butter, cold

2 cups (480 grams) hot milk

1/2 cup warm water

2 tbsp dry active yeast

7 cups flour

1/3 cup sugar

1 tbsp salt

1 tbsp oil for the Instant Pot

FILLING:

3 tbsp melted butter

1 tbsp cinnamon

1 cup packed brown sugar

CREAM CHEESE ICING:

8 oz. (225 grams) cream cheese room temperature

8 tbsp unsalted butter softened

1 tbsp vanilla extract

2 cups powdered sugar

HOW TO MAKE INSTANT POT CINNAMON ROLLS

Dough:

Step 1: Heat the milk in a small pot over medium heat. Then, add in the cold butter and stir until well incorporated. Allow it to rest for a couple of minutes at room temperature.

Step 2: Add the yeast to another mixing bowl along with 1 tbsp sugar, and warm water. Mix well until just combined and allow it to rise for 10 minutes.

Step 3: Into the bowl of a stand mixer, transfer the yeast and milk mixture. Then, add the eggs, salt, and the remaining sugar. Beat until combined.

Step 4: Now, add 3 cups of flour and beat until mixed. Beat in the rest of the flour until sticky.

Step 5: Into the Instant Pot, drizzle a little oil, and evenly spread it. Add the dough and roll to coat with oil. Next, press the Yogurt” button on the Instant Pot. Put the lid on and set it to 20 minutes to proof the dough.

Step 6: Take the lid off when the time is up and knead the dough. Then, proof for additional 10 minutes.

Step 7: Sprinkle flour on your work surface, then roll the dough into half-inch thick rectangle and brush with melted butter.

Step 8: Into a mixing bowl, combine the cinnamon and brown sugar. Sprinkle this over the dough. Roll again before slicing into 1-inch pieces. Leave the pieces to rest for about 15 minutes.

Step 9: Then, bake at 375 degrees F or 190 degrees C for about 20 minutes or until golden brown.

Cream Cheese Icing:

Step 10: Place the butter and cream in a mixing bowl. Beat well, then add the vanilla and powdered sugar. Mix until well incorporated. If needed, add extra milk.

Step 11: When the rolls are done baking, take them out of the oven and evenly pour the icing over.
