1 ¼ cups of light brown sugar
½ c. granulated sugar
1 egg
1 egg yolk
1 teaspoon of vanilla extract
2 cups of flour
1 cup of uncooked rolled or old fashioned oats – not quick oats.
½ tsp. baking soda
½ tsp. kosher salt
¼ tsp. ground cinnamon
1 cup of white chocolate chips extra for garnishing, if desired*
1 cup of semi-sweet chocolate chips extra for garnishing, if desired*
1 cup of roughly chopped toasted pecans, extra for garnishing, if desired*
How to make I Want to Marry You Cookies
Step 1: Prepare the oven by preheating it to 325 degrees F.
Step 2: Melt the butter in a medium saucepan over medium heat until melted. Once the butter is melted, remove the saucepan from the heat.
Step 3: In a bowl, add the melted butter, brown sugar, and granulated sugar. Stir until the sugars are incorporated and smooth. Place inside the fridge and chill for 10 minutes.
Step 4: After 10 minutes, remove the sugar mixture from the fridge and stir in the egg, egg yolk, and vanilla.
Step 5: Add in the flour, oats, baking soda, half teaspoon salt, and cinnamon. Mix until well combined.
Step 6: Then, stir in the white chocolates, chocolate chips, and pecans.
Step 7: Scoop and roll the dough using your hands to make medium-size balls. Place each ball on the sheet pan. You can tuck in some extra chips and pecans on top of the dough mounds.
Step 8. Chill first for 30 minutes before baking.
Step 9: Once chilled, remove from the cookies from the fridge and place inside the preheated oven. Bake at 325 degrees F for 14 to 18 minutes or until golden brown.
Step 10: Once done, remove from the oven but do not remove the cookies yet from the pan. Let the cookies cool first for several minutes. Then, transfer them to a cooling rack.
