1/2 pound Brussels sprouts, trimmed and halved
1 pound sweet potatoes, peeled and cubed into small bite-size pieces
4 to 6 chicken thighs, boneless skinless
1/2 teaspoon Italian seasoning, divided
3 tablespoons honey, divided
1 teaspoon minced garlic
4 tablespoons Land O Lakes® Butter with Olive Oil & Sea Salt, divided
1/2 teaspoon salt, divided
1/4 teaspoon black pepper, divided
How to make Honey Glazed Chicken Skillet
Step 1: Prepare the oven. Preheat it to 375 degrees F.
Step 2: Sprinkle the chicken thighs with 1/4 teaspoon salt, 1/8 teaspoon black pepper, and 1/4 teaspoon Italian seasoning (you can add more).
Step 3: In a large, oven-safe skillet, melt 2 tbsp Land O Lakes® Butter with Olive Oil and Sea Salt over medium-high heat. Whisk in 2 tablespoons of honey until the mixture is bubbly.
Step 4: In the skillet, place the chicken and sear for about 3 to 5 minutes per side or until golden brown. Set the chicken aside when done.
Step 5: To the skillet, add the rest of the 2 tablespoons Land O Lakes® Butter with Olive Oil & Sea Salt and 1 tablespoon honey. Mix well until blended, then toss in the sweet potatoes along with the Brussels sprouts. Mix well until coated and continue to cook for additional 5 minutes. To taste, season with the rest of the salt and pepper.
Step 6: Over the sweet potatoes, nestle the chicken thighs. Place in the preheated oven and bake for about minutes or until the chicken is completely cooked and the sweet potatoes have softened.
Note:
If using chicken breasts instead of chicken thighs, use 1 pound boneless skinless chicken breast. Using a heavy skillet or heavy rolling pin, pound the chicken breasts to an even thickness. Season with the seasonings and cook following the recipe until the internal temperature of the chicken reached 165 degrees F. Before slicing, allow the chicken to rest for about 5 minutes.
