INGREDIENTS
2 lbs carrots cut into 3” pieces
1/2 c. butter
2 tablespoons honey
4 garlic cloves minced
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
Fresh parsley
HOW TO MAKE HONEY GARLIC ROASTED CARROTS
Step 1: Prepare the oven. Preheat it to 425 degrees.
Step 2: Melt the butter in an oven-safe skillet. Once melted, whisk in the honey and garlic.
Step 3: Toss in the carrots, making sure they are evenly coated with the butter mixture.
Step 4: Place inside the preheated oven and bake for about 25 minutes or until the carrots are easily pierced with a fork.
Step 5: To slightly caramelized the carrot, broil for about 3 to 4 minutes (optional).
Step 6: Before serving, sprinkle the carrots with chopped parsley.
NOTE:
You can melt the butter and saute the garlic in a skillet if an oven-safe skillet is unavailable. Then, put the carrots in a baking dish, pour over the garlic butter and honey, and toss to coat. Pop in the oven and bake as directed.
